"Acorn Squash and Apple Stuffing" for dinner. We had friends over so I thought this would make a nice compliment to my "welcome autumn" themed menu. It was easy to make, looked beautiful when it was done and better still was just delicious! My girlfriend spent 5 minutes after everyone else was done eating scooping out every bit of squash like it was a bowl of ice cream. She never had stuffed squash before. She just loved this.

Nothing says "autumn" more then a yummy squash! The presentation of a hallowed out squash or pumpkin is always impressive at the dinner table. Make sure you don't tell anyone how easy it is to do!
