I've got one in the fridge that's been there for almost two months...if anything I think it will be a little alcoholic and maybe will make more of a mess when it's opened...hopefully anyway...lol

FINAL RESULTS: Well, the grape was very sweet and good, but no fizz. The berry was good, not too sweet, and definitely fizzy. The apple cider just tastes like sweetened, gingered apple cider. Next time, I think I am going to double the amount of starter we add, just to give things a boost.

Ok, we had to try it. We have just finished the first week (cultivating the starter)... Tonight we mixed it with concord grape, mixed berry (strawberry raspberry blackberry), and apple cider. Give us a few more days and we'll give the final results!

They turned out great! I especially liked the raspberry beacuse it was a little more tart than the blueberry. I'd recomend bottling them in canning jars to lessen the over flow when opening the bottles. I bottled mine in both and had a much worse time with the narrower, longer necked bottles.

I personally havent made any soda. But I love this Hobby Farm Home magazine and the Summer 2008 issue was full of homemade soda recipes. Have fun girls!

Bottled mine yesterday, three days after doing the fruit step. The raspberry started bubbling over night and was totally ready yesterday morning. I waited until last night to bottle the blueberry because it wasn't bubbling at all but I needed to do it then anyway because I'm headed out of town for a harvest party at my parent's tonight and didn't want to leave it sitting. So I bottled it and it's bubbling now, I wonder if the berries were keeping it from bubbling in the gallon jar?

Looking forward to trying this out at the party tonight...let's hope it's not alcoholic ;)

I went ahead and bottled mine in some old juice bittles. But I think mine is more like wine. I think that's why the boy in the pictures is so happy! He's really drinking wine. I think I got a little lightheaded from a few sips, too.

So I think I'll try more later. Hope ya'lls does better than mine did.

I made up my fruit stuff (raspberry and blueberry) this morning and am waiting for it to cool to add the ginger mixture to it. I accidentally made the raspberry with 8 cups of berries so it's going to be quite fruity...lol I'm really looking forward to seeing how this all turns out.

This morning I checked the jug. The berries are all on the top now and it's very bubbly, but it really smells like wine! I think this afternoon I will strain it and bottle it.

I might try the maple syrup next time. We got some pure raw syrup straight from N.Y. state when our pastor and wifwent up to visit their family. They have a maple syrup farm, I guess that's what it's called. It's the best syrup I've ever tasted. So it would be good to use for this.

And yes, I did use the Ball pectin to make the jelly. It called for a hot water bath, which I've never done with jelly before. So maybe that's what did it. I don't hot water bath jelly anymore.

It said in the recipe you can use maple syrup.
Did the plum jelly need pectin? Is that what you have to use sometimes? Is that what makes it gel?

Oh, as far as the sugar, it's consumed in the process. The longer it sits, the less sweet it is.

Also about the bottles. I was going out Tuesday to the World Market. They have neat bottles of all types. And I thought maybe Pier 1. But I would think just mason jars would work. Just don't fill them full.

OK, I started the culture last Sunday. I used Sucanot, that's all I use. She said we could use that in the instructions. So, the culture was doing its thing in the jar on the counter for 5 days. Nice and bubbly and smelled good. So I did the rest of the process just like she did. I used Sucanot. This was Friday. It has not done a thing as far as being bubbly at all and I was getting worried. We were gone all day today and I just went to check on it and there is something going on. There's some bubbly filmy something on the top.

So my question is the use of Sucanot. I used it this summer for my first batch of plum jelly. 15 cups of it. It does not jell. It's more like syrup. So I had to use white sugar for the rest of the plums.

Is anyone else using Sucanot? And what's yours look like? Or if you used white sugar, how is it? I think I'll make some with white, but I don't want to lose 6 more cups of blueberries.

I started the soda! Where do I get the bottles from or is there an alternative to those bottles?
Isn't this a process of fermentation and isn't it healther for you?
I am concerned about the sugar. Is it changed in the process?

I was checking out some rootbeer extract, Zatarains, that a neighbor gave me. Looking for a more exact recipe on how to make it, and I found sites on making cream soda, and ginger ale. I think it was wikipeada, (?) that held information on making all. Though they did all include using yeast.

Mine is starting to get more foamy now. When I opened it up this morning the top was covered with foam and there are bubbles coming up from the bottom like a pop would do. I'm looking forward to Tuesday when I get to start the fruit part. I've got to find a gallon jar or something to put it in first though and choose what fruit I'm going to make it with. Since this will do three batches I'd kind of like to go ahead and do them all but I don't know if I'll have room for them all when it's time to bottle. I think they'd get used right up because we've got a harvest party at my parent's farm on Saturday so that's no problem...lol

I've got mine on the kitchen counter as well and just added the second days ginger and sugar. It's already a little bubbly, just around the edges of the jar right now.

I would imagine that if it was in a colder place it would take longer to ferment because it says that when you put it in the fridge to store it that slows the fermentation down some.

Just stirred mine again. It's a little bubbly now. I just have mine on the kitchen counter. I wonder if the location makes a difference as to how much or how fast it takes to ferment. Any thoughts on this? It is SO cold out this morning!

Leezard, what's yours looking like? Maybe we can compare. I started mine Sunday so will be doing the next step tomorrow!!
