 My plum jelly is NOT. I'm clueless...

I followed the directions for plum jelly in my canning cookbook and ended up with 16 jars of plum syrup. The recipe said that plums have enough pectin and don't need any, so I didn't use it.

Ok, fine, so I have lots of pancake syrup now. I'll just use pectin in the next batch and get my jelly. I followed the directions on the pectin. Well, almost. It said to stir constantly and I had to walk away for a minute to help dh with something. So, now I have 10 more jars of syrup!

So, one last shot. I waited for dh to go to bed and I tried it with the pectin again; following the directions to the letter. 10 more jars; the lids are just popping now so it'll be a bit before I know if it worked this time or not.

I'm thinking that jelly making is an exact science that isn't one of my better skills! No wonder Grandma only made jams, preserves and butters! Any of you jelly making masters out there have an idea what I could have done wrong? Anybody have any idea what I can do with all this syrup? I don't know if I can even give away that many jars of pancake syrup! Can it be remade into something else? I feel like I just wasted 36 lids.

I'm glad it worked for you, Suzanne. I've never had any problem with preserves. This was my first attempt at jelly and I think my last. I'm perfectly happy with preserves and will just stick to what works for me.

Same thing happened to me with strawberry preserves this year, new recipe did not call for pectin, was supposed to thicken naturally. Well, I ended up opening up all my jars and adding pectin and recanning. Worked just fine.

I am done with the "syrup" for now. Next year I will definitely use the chillover. Anyone need some syrup for ice cream? ha ha.

Lisa: Same thing happened to me! I thought I followed the directions exactly. Obviously I didn't or I wouldn't have jars and jars of syrup like you. ha ha

Lisa- did you see the recipe for making jelly using chill-over powder in one of the latest magazines? 100% fool proof since the chill-over will set and it tastes AMAZING! My parents and I got to sample some out at the Farm before I left Idaho and my mouth is watering just thinking about it!!

It has happened to us all at one time or another...don't give up!!! plum syrup is wonderful for dipping egg rolls in!! And heck..how can you have too much yummy syrup??
I add plum jelly to my homemade bbq sauce..you could use some that way too..adds nice flavor.

I have not attempted jelly. Jams yes, jelly no. So I applaud your effort no matter how it turns out. If you wind up with syrup, just have a neighborhood pancake breakfast and I bet you'll get raves!

I hope so, Amy Grace. I've been told it should set up by the time it cools and that's just not the case here. Even the last batch I did shows no sign of thickening.

Last year I made plum syrup (on purpose) and overcooked it and it turned a brownish red and tasted almost burnt. It solidified over the winter, too. So, maybe this attempt at jelly will work?

Lisa - it might set up more as it sits - I have had this happen several time. The only time I made plum jelly I cooked the bejesus out of it because it wasn't thickening, then after it sat on the shelf for a couple months it became something like flubber - completely unspreadable. So yours may indeed turn into something that resembles jelly:)
