This will be the first Thanksgiving I have done~~I have a question or two~
How big of a turkey do you need for approx 16 people?? I want to have left overs ...for making pot pies and such..
Does anyone cook it in an electric roaster? My church always does it in roasters and I wonder if you need a cooking bag...or just put it in there?

The standard is 1 lb of turkey per person. You shouldn't need a bag. The idea of cooking food in plastic isn't very appealing. As long as there's moisture in the roaster the turkey should turn out nice and moist.
