the ultimate zuchinni bread recipe? I've looked at that giant zuchinni that my son's neighbor gave me long enough - it's time to use it up. Anyone have a really great bread recipe? Thanks!!

Lemon Zucchini Bread

4 cups flour
1/2 cup sugar
1 pkg instant Lemon Pudding
1 1/2 tsp soda
1 tsp Baking powder
1 tsp salt
Combine in a very large bowl
In another large bowl, whisk together:
4 eggs
1 1/4 cups milk
1 cup vegetable oil
3 Tbls lemon juice
1 tsp lemon extract
Stir egg/milk mixture into flour mixture
until just moist. Fold in:
2 cups shredded zucchini
1/4 cup poppy seed
2 tsp grated lemon peel
Pour into 2 greased 9X5 loaf pans
Bake at 350 for 50-55 min.Test with toothpick
Cool for 10 min before removing from pan.

Enjoy!!

I have a wonderful zuc bread, too. It's good for you but, you don't even know it!

2c all purpose flour
1c whole wheat flour
1tsp salt
1tsp baking soda
1/2 tsp baking powder
2 tsp ground cinnamon
1 tsp ground nutmeg
2 Tbls ground flaxseed
1c chopped nuts
3 eggs
1/2 c sugar
1c canola oil
2c shredded zucchini

Heat oven to 325. Grease and flour 2 bread pans. In a medium bowl, combine first nine ingredients and set aside. In a large bowl beat eggs, sugar and oil until fluffy. With a spoon, stir in zucchini. Add dry ingredients to zucchini mixture, stirring just until flour is moistened. Pour into prepared pans and bake for 60 minutes or until tests done. Cool in pans 10 minutes before turning out.

DH won't eat zucchini, but he loves this bread.

Here's the recipe I used recently- it was very good!

3 eggs
1 C oil
2 C sugar
2 C grated zucchini
1 tsp vanilla
1 tsp salt
1 tsp soda
3 C flour
1/2 tsp vanilla

Glaze-
1 C powdered sugar
1/4 C orange juice
Mix together until smooth. (Have done before bread is out of oven)

Beat egg. Mix in oil, vanilla and sugar. Add zucchini.

Add salt, soda and 1 C flour. Mix well. Add remaining flour a little at a time until all mixed in. Pour into 2 prepared bread pans.

Bake at 350 degrees for about 45 minutes until golden brown. As soon as you take the bread out of the oven, pour the glaze over it. It will bubble and sizzle. THe glaze adds a great flavor and will help keep the bread moist.

Yes! I have a new and wonderful recipe for Zuc bread. But look at the time. Been here for too long already. Will post it as soon as I can. In the mean time, if you subscribe to Taste of Home, it is in the J/J 07 issue. Lemony Zucchinni bread.
