The local peaches are in here. I got a great deal a whole mess of them. I came home and started making peach cobbler right away. Hint to self: Check to make sure you have the ingredients, doofus! I got all the way to add the milk part. There was barely a swallow left in the carton. (Mom's of teens should know this already) Strangely enough, I had buttermilk instead. I crossed myself fingers, subbed it and added a generous sprinkling of raw sugar crystals over the batter before baking. It was the best cobbler I have ever made! I even went back to my cookbook and changed the original to "my" way.

Here goes!
4 C peeled and sliced ripe peaches, (i use more, cuz i like more fruit)
1 C plus 1 1/2 Tbs all purpose flour
salt
2 tsp baking powder
1 egg
3/4 C Buttermilk (the swictharoo)
4 Tbs Butter, melted
1/4 C raw sugar
Preheat the oven to 375F. Butter an 8 inch square baking dish. (note. I think mine is larger because it held more fruit)
Toss the peaches with 3 TBS sugar, 1 1/2 TBS flour, and a pinch of salt in a bowl. Pour into the baking dish. Sift together 1 1/4 C flour, 1 teaspoon salt, and the baking powder in bowl. Mix with 1 C sugar. Beat together the egg, milk, and butter in a large bowl. Stire into the dry ingredients and mix well. Pour over the peaches. Top the batter with the raw sugar to make the crust.
Bake for 40 minutes.
Oh yeah and Serve the cobbler warm, topped with vanilla ice cream!

Buttermilk, yogurt or clabbered milk (add 1 tablespoon lemon juice to to cup milk, let sit 5 minutes) always adds more flavor and gives a better texture to most quick breads from pancakes and waffles to cornbread, biscuits and scones. Cobbler topping is basically scone dough, so is the shortcake in strawberry shortcake. I wouldn't use it with pumpkin or banana bread though.

mmmm I think buttermilk would have to be sooooo good for this (after all who doesn't like buttermilk biscuits, or buttermilk pancakes?).

Also one thing I keep plenty of dr milk powder in the freezer, love the stuff!
