Posted - Sep 17 2008 : 07:43:37 AM here's one of my favorite recipes. i like making it for lunch when i get tired of sandwhiches:
Bean salad wraps
4 8-inch tortillas 1 15 oz can black beans, rinsed 1/2 c. chopped green sweet pepper or jalapeno 2 T. fresh cilantro 1/3 c. salad dressing/mayonaise 1 T. lime juice lettuce
mash beans slightly and add everything together; spread bean mixture on tortillas and top with lettuce. enjoy!

Posted - Sep 16 2008 : 08:29:35 AM You can mash them with a potato smasher, add garlic, cumin, and salt and make "refried" beans. (butter optional)
Or my families favorite. Corn soup!
Three cans creamed corn three cans black beans fried sweet potatoes and onions (like you would home fries kind of) salsa (as much of little as you want, as hot or mild as you like).
Mix all together, and it's a soup, good served hot or cold.

Posted - Sep 15 2008 : 9:07:05 PM This is a super easy way to use black beans. My husband loves it, too!
Slice in 'cubes' 1 package of smoked sausage (we use Healthy Ones). Heat in a saucepan with a bit of oil. Add a can (liquid and all) of black beans and a few dashes of Tabasco sauce. Cover and simmer until the beans are heated.
Serve over brown rice.
I usually start the rice in the rice cooker and then as soon as that's done I do the rest. It takes less than 10 minutes! And it's so yummy!

Posted - Sep 04 2008 : 6:35:01 PM My friend gave me a yummy recipe using black beans. Not sure where she got it from. It's possibly from Weight Watchers. Here is what it takes:
1 to 1 1/2 lb. ground turkey 1 can black beans (drain some of the juice off) 1 small jar of salsa(I use Pace) sour cream tortilla chips
Brown the turkey & drain. Add the beans. Mash the beans a little in the pan w/the meat. Add the jar of salsa. Cook until heated through. Serve on a plate w/sour cream on top & use your chips to scoop it up.
You can adapt this to your taste. One time I was out of salsa so I used a can of Rotel & added some taco seasoning & cumin. It still was a hit.
I'm sure there are other ways to eat it than w/chips, but thats how we like it & how my friend told me to eat them. I am sure it would even taste good over rice or noodles. Everyone in the family loves it, but my oldest DD will pick around the beans. (She doesnt like the fact that they're the musical fruit. )

Black Bean and Corn Salad
1- 15 oz can Black Beans (drained) 1- 15 oz can Garbanzo Beans (drained) 1- 15 oz can Black Olives (drained and sliced) 1- 15 oz can Whole Kernel Corn (drained)
½ Red Bell Pepper chopped ½ Green Bell Pepper chopped 1 medium Onion chopped ¼ c. white vinegar ½ c. olive oil 2 T. sugar ½ tsp. black pepper ½ tsp. salt
Mix all ingredients in mixing bowl, cover, put in refrigerator 3-4 hours or overnight.

Posted - Sep 03 2008 : 9:50:38 PM We frequently used canned black beans just as a side dish, heated and a little Monterey Jack cheese shredded over the top. Kristine, your recipe sounds yummy, I would have never thought of a cinnamon stick. And I would have to leave out the cilantro since I'm one of the few people who don't like the stuff (tastes like soap to me, yech!).

Posted - Sep 03 2008 : 9:42:27 PM Elizabeth, My favorite way to cook them is to saute chopped onions, garlic & a few pieces of broken cinnimon stick with a pinch of cayenne in olive oil. Then add your dry black bean and water. Bring to boil, then lower heat to a simmer. Cook till beans are tender. Add some chopped fresh or canned tomato. Add a bunch of chopped cilanto. Season with salt. Serve over steamed brown rice or just in a bowl with diced avocado and sour cream. Tortilla chips are good too.
I think this will need to be on our family's dinner list next week. Yum!!!
