Anyone have any great eggplant recipes? I planted a few plants, but got so many eggplants that I am running out of ideas!

I'm a meat eater, lol and I seen Lasagna was already suggested, that's what I came into suggest, but I wanted to suggest just the opposite! lol Use meat, but sliced eggplant in place of noodles! lol haha

We like fried eggplant almost as much as fried green tomatoes. Just dip it in a flour/cornmeal/salt mix, then in a milk (or buttermilk)/egg mix, and then back in the flour mix. Fry in hot oil...I use our lard and they turn out great!

Eggplant Caviar
2 tbls. olive oil
1 small-med. eggplant, peeled and diced
1 large green pepper, chopped (3/4 cup)
2 med. onions, chopped (1 cup)
2 tbls. tomato paste
1 tsp. sugar
1 1/2 tsp. salt
1/4- 1/2 tsp. freshly ground black pepper
1 tbls. lemon juice

Heat oil; add eggplant, green pepper and onions and saute 20 min. stirring frequently. Mix in other ingredients except lemon juice and cook 10 min. over low heat. Remove from heat and add lemon juice. Blend well.
Serve with as a cold dip with crackers.

while grilling the other evening, I remembered the eggplant!

Sliced it sideways into thick discs, bathed it in olive oil and grilled it 'till tender

what we didn't eat that night, I sliced into spaghetti sauce w/ the last of the zicchini

MMMmmmmm I started some from seed this year and have enjoyed the first 3 the other day.

And the cool thing is, they were relocated to an area of the garden where none have been before, so no bad pesticides had to be used this year!

Baba Ganoush is my favorite way to eat eggplant. You can also make a eggplant kuku (Persian egg casserole). I think grilling eggplant is the way to go too. Almost as good as a steak. My brother planted some eggplant for me, I need to ask him if they are ready yet. My garden is too small for them. Enjoy your eggplant, no matter how you prepare them!

you can cut it up in a stir fry. My favorite is babganosh (sp?) grill or bake the eggplant until it is soft. mix in olive oil, rosemary and garlic and blend. It is a great spread on bread.

Judith- Your recipes sound great! For the bread crumb recipe- what texture are you looking for to determine it being done? Crispy? Flexible?

Moussaka, lasagna (using a layer of eggplant instead of meat), and a quickie favorite of ours is to spread slices of eggplant with a thin layer of mayonnaise and dip it in a mixture of half bread crumbs and half parmesan cheese. Put on a baking sheet and bake at 350 until done. Can't tell you how long, as I never timed it, but it doesn't take long -- maybe 15-20 minutes.
