Looking for something easy but not Easy Mac... Also want to stay away from processed cheese food (although my little guy just luvs that over cooked pasta....)

another one that is sooooo yummy but a tad more work (it's Alton Brown's) is this one:

Rachel's is really fast and easy you don't even have to bake it although I did anyway because it came out soupier then I like. I baked it at 350 degrees for about 30 minutes or so your nose will know!
