For those of you who have zucchini coming out of your ears and are looking for something different to try...
Zucchini pancakes. Pretty much the same as potato pancakes. Just grate, add egg and flour to bind - will be sticky. Add your favorite spices. Fry in pan on med/low heat till done, or brown quick and finish in oven. You can bread them before frying too. Or use bread crumbs in place of flour. They freeze and re-heat really well - if cooked first.
