Posted - Aug 04 2008 : 1:41:27 PM I am looking for a good marinade recipe for some beef roasts. We are having a 50th anniversary party for my ma and dad. Going to slice up some beef roasts, but I was wondering if anyone had a good marinade recipe to share.

Posted - Aug 07 2008 : 11:07:27 PM My recipe uses a bottle of Italian salad dressing....
Italian Pot Roast
5 lb Pot Roast 1 small bottle Italian salad dressing 1 jar grated parmesan (4C brand in glass jar is the best) 6 red potatoes; washed & cut into 4ths (leave skins on) 1 small bag baby carrots
Place Pot Roast in crockpot. Add half the salad dressing and Parmesan. Add potatoes and carrots and add the rest of the salad dressing and Parmesan. Cook on high 4 hrs or low 6-8 hours.

Posted - Aug 07 2008 : 5:48:59 PM Michele, I still can't find my Italian Beef recipe. Like Peg's it calls for a package of dried Italian seasoning, water and something else. I made it last year and I'll be darned if I can find it. Sorry, looks like you got a couple of good recipes here though!
See you at the anniversary party! Dawn in IL |

Posted - Aug 05 2008 : 1:08:56 PM If you have a blender, this one is delicious and my own homemade one.
1 package of asijes (sp?) they are little green peppers, make sure you dont get the hot kind 2 green bell peppers 2 cubanele peppers 1 large onion 1 entire thing of garlic 2 tablespoons of vegetable oil 1 bunch of cilantro
Place in the blender, mix till pureed, ready to use right away. You can store the rest in a tight container for future use.
What I do is poke holes in meats and put some in the holes with my finger, I also marinate the entire meat in a bowl either for a half hour or you can let is soak overnight... the marinade is delicious!

Posted - Aug 05 2008 : 12:02:12 PM This is one we like for steak and I've used it for a roast done on the rotisserie. This does a couple of steaks or a small roast.
1/2 cup oil 1/3 cup low sodium soy sauce 1/4 cup lemon juice 2 tbsp prepared mustard 2 tbsp worcestershire sauce 1 clove minced garlic (we like more!) 1 tsp cracked pepper
