I forgot to tell y'all. I baked to loaves yesterday a egg bread and banana bread. I cheated and put the egg bread in the machine. WE will use it to make french toast.

What are your favorite breads to make?

I like all bread...I love to eat it hehehe!!! I sure do love to make a simple wheat bread! My favorite and great for toast and sandwiches!

Pita Bread - Joy of Cooking

Combine in a large bowl
3 cups Bread Flour (in Canada AP is fine)
1 1/2 tbsp sugar
1 1/2 tsp salt
1 1/2 tbsp yeast
Add:
2 tbsp melted butter
1 1/4 cups room temp. water
Mix by hand for about a minute. knead for about 10 minutes until dough is smooth, soft and elastic. Add flour or water as needed, dough should be slightly tacky but not sticky. Transfer to an oiled bowl and turn once to coat. Cover and let rise 1- 1 1/2 hours.

Set rack in lower level of oven and place a pizza or baking stone on lower rack. Preheat oven and stone at 450F for 45 min. If you don't have a stone, just invert a baking sheet on the lowest rack, and preheat fo 5 min at 450F.

Punch down dough. Divide equally into 8 balls, let rest 20 mintues. On a lightly floured surface roll each ball into a round (approx. 8 in diameter). Spray the baking sheet or stone with water and wait 30seconds, then place as many dough rounds as possible on sheet/stone. Bake until dough rounds puff up like a balloon, about 3 minutes, then bake 30 seconds more and immediately remove breads from oven and cool on a wire rack.

Enjoy!

When I made this I used a baking sheet. It worked pretty well. I didn't get the really big puffyiness I was after, but they did puff a little, and they are very yummy!

Right now I'm using my Breadman breadmaker only for Porter's Gluten Free breads and bake the other breads in the oven.

My fave sweet bread right now:

Pumpkin Banana Bread
Yield: 24 servings (2 loaves)

1 1/2 cups sugar
3/4 cup LAND O LAKESŪ Butter, softened
3 eggs
1 cup canned pumpkin
2 medium (1 cup) ripe bananas, mashed
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon pumpkin pie spice*
1 cup chopped walnuts or pecans


Heat oven to 350°F. Combine sugar, butter and eggs in large mixer bowl. Beat at medium speed, scraping bowl often, until mixture is light and fluffy (1 to 2 minutes). Add pumpkin and bananas; continue beating until well mixed (1 to 2 minutes). (Mixture will have curdled appearance.) Reduce speed to low; add all remaining ingredients except nuts; beat just until moistened (1 to 2 minutes). Stir in nuts by hand.

Spread into 2 greased 8x4-inch loaf pans. Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pans. Cool completely.

TIP: If using two (9x5-inch) loaf pans, bake for 40 to 50 minutes.

*Substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon each ground nutmeg and ground cloves.

Meg, could you post your pita recipe? I know I could always look one up on line, but I much prefer tried and loved recipes.

This week I've been making flatbreads! I never knew I could make them, but I pulled out my Joy of Cooking and yesterday I made tortillas, and today I made pita bread. They were so yummy!

I just pulled a loaf of Jalapeno/Cheddar bread out of the oven-YUM! Better yet the jalapenos came from my garden. This is one of our favorite breads here.

I have so many favorites. Banana and zucchini because they're so easy. Plain old white and wheat are just a chore. They get eaten without even a comment unless they go without for a while ;) I really love the cinnamon/raisin bread I make. Rye is one of my favorites since a ham & swiss is not really a ham & swiss without the rye bread! And if you make up your sandwich while the bread is still warm out of the oven mmmmmmmmmmmmmmmmmmmm.
