Has anyone ever tried an Energy bar from Costco? They are so delish. It is this muffin/bread like thing with apples, nuts, cinnamon, etc. Anyhow. I would like to duplicate the recipe into a muffin. Any ideas or recipes? Since living in rural nebraska I get to a Costco once in blue moon. So I'm looking for ideas.

if you dehydrate it below 118 degrees it doesn't kill the enzymes so it is still considered raw. so if I dehydrated rather than baked it would be considered raw. So many cookies, cakes, breads and bars are dehydrated rather than baked. You still have that familiar taste and texture but complete with enzymes.
I don't dehydrate everything. I eat lots of foods in their natural state. Salads, fruits, green smoothies.

Debra- I didn't know it had to be dehydrated t be considered Raw??? I thought Raw meant the food in it's natural state. Or is that just called Whole Food?

This recipe comes from Whole Foods Market:


Homemade Energy Bars
(Dairy-Free, Gluten-Free, Vegan)

Serves 16

1 1/2 cups ground almonds
1 1/2 cups ground walnuts
1/4 cup sesame seeds
1/2 cup pine nuts
1/2 cup raisins or dried cranberries
1 cup dried blueberries
3/4 cup agave nectar, maple syrup or molasses
cinnamon, cardamom or nutmeg (optional)

Preheat oven to 275°F.

Mix all ingredients together in a large bowl. The mixture will be somewhat sticky. Using wet fingers press it down into a 7x11-inch baking dish that has been sprayed with canola oil spray. Bake for 30 minutes to one hour depending on how toasty you prefer it. Cool and then cut into 16 pieces. Store in your refrigerator.

Nutrition Info
Per serving (1 piece/53g-wt.): 220 calories (140 from fat), 15g total fat, 1.5g saturated fat, 5g protein, 18g total carbohydrate (3g dietary fiber, 10g sugar), 0mg cholesterol, 0mg sodium

Peg, do you mind if I share this recipe? I belong to numerous raw food lists and we are always looking for a raw food recipe for energy bars- since the fruit is all dehydrated and you could use raw almond butter it is considered a raw food.. Thanks!

Hearty and Healthy Energy Bar

1 cup dried apricots
1 cup dried figs
1 cup dates
1/2 cup raisins
1 cup unsweetened coconut
1/2 cup almond butter
1/2 cup honey

Grind apricots, figs, dates and raisins in food processor, each ingredient separate. Add unsweetened coconut. Mix almond butter and honey. Combine the fruit mixture and almond butter mixture. Form into bars or balls and chill in refrigerator.

i love mary jane's task bars, too! and her pastas! especially like the ones with curry in them! was just thinking....it would be good to stick one or two of the task bars in my purse when i start christmas shopping in a couple months...i hate when it gets busy at the malls and you start starving and you have some more shopping to do and don't want to wait for the lines at the food courts!!
