 What to do with green tomatoes? Here ya go!

As requested from the Garden Gate:

Fried Green Tomatoes (my own recipe)
Green tomatoes, sliced about 1/4" thick
whole wheat flour
eggs
1/2c bread crumbs
1/2tsp garlic powder
1/2 tsp black pepper
1/2c parmesan cheese
Salt, if desired.

Put flour in a deep plate. Break eggs and scramble in another deep plate. Mix remaining ingredients into yet another deep plate. Dip both sides of tomato slices in flour, then egg, then seasoned bread crumbs. Fry in oil in a pan until golden brown on both sides. Serve warm. Can be re-warmed in a microwave.

I also do this with zucchini. My co-workers look forward to the end of my garden because I always bring fried green tomatoes and zukes into work for a treat.

Green Tomato Bread
3 eggs
2c sugar
1c oil
1tbs vanilla
1tsp salt
1/4tsp baking powder
1tsp baking soda
2tsp cinnamon
1tsp cloves
2c white flour
1c wheat flour
2c grated, unpeeled green tomatoes

Beat eggs until light and fluffy. Add all ingredients except flour and tomatoes. Mix well. Stir in flour, mixing well. Fold in tomatoes. Bake in 2 greased and floured loaf pans for 1 hour at 325 or until bread tests done (mine takes an hour and a half). I sometimes add chopped walnuts, if I have them on hand. This bread freezes very well.

Green Tomato Salsa
Not really much of a recipe here. You pretty much mix it up according to taste and can in a hot water bath:
Green tomatoes
Jalapeno peppers
onions
bell peppers
cilantro
minced garlic
salt

I'd love to see other green tomato recipes if anybody has one.

Ooooh, Jody, that sounds wonderful. We have lots of apples around this town that nobody uses. This will be a great recipe for using them up, too.

Green Tomato and Apple Chutney
(yields 4 quarts)

2 T vegetable or olive oil
3 large Spanish onions, peeled and thinly sliced
1 8 oz. piece of fresh ginger, or 4 oz. pickled ginger, finely chopped
6 jalapeno peppers, seeded and diced
3 carrots, peeled and julienned
1/4 cup honey
1 T each ground cumin and tumeric
2 tsp each ground allspice and cinnamon
1 cup rice vinegar (or white vinegar)
1 cup raisins or currants
10 medium green tomatoes, cored
10 medium cooking apples
1 bunch fresh cilantro, cleaned and chopped

Before you begin cooking the chutney, cut the tomatoes in half across and squeeze out the seeds. Cut into 1/2
inch dice and set aside. In another bowl, peel the apples, quarter remove core and cut each quarter into 4 pieces,
sprinkle with small amounts of vinegar and toss -- this will prevent them from discoloring. Proceed with the
cooking process.

In a large skillet, heat oil over high heat, add onions, ginger, peppers and carrots and cook approximately 5
minutes until vegetables begin to soften. Stir in honey, bring to a boil, add all the dry spices and stir. Pour in
vinegar and stir again, let boil 1 minute. Add raisins and let cook 2 minutes to plump. Last, add tomatoes and
apples, mix well. Let cook approximately 15 minutes until they are cooked but not mushy.

Remove from heat, add the cilantro and let cool. This is better if it sets a couple of hours to marry all the flavors.

Aunt Jenny, I've never pickled green tomatoes. What do you do with them after they're pickled? Just eat them like you do pickles?

Oh, I also add raisins to the bread sometimes, too. It's one of those recipes you can mess with some.

Yum!! I have never made bread with them...but will be frying and pickling some for sure. We always end up with a couple of boxes that havnt' ripened enough when it starts freezing in Sept....always!!! But then....that is part of the fun. I add them to salsa every year too.

Thanks Lisa!!! I may not even care if my tomatoes EVER get red. These look yummy! I remember having fried green tomatoes as a kid but I've never tried tomato bread...
