Kentucky Derby Pie


4 whole eggs
1/4 cup brown sugar
1 teaspoon vanilla
1 stick margarine melted
1 tablespoon flour
3/4 cup white sugar
1 cup pecans
1 cup white corn syrup
1 cup chocolate chips

3 tablespoons bourbon
9 inch unbaked pie shell (either one large deep dish or two regular)

Melt butter. Beat eggs and add the butter and eggs to other ingredients. Pour into pie shell. Bake at 350 degrees for 45 minutes.

I'll send you my recipe one day, Amanda--this pie, along with Benedictine Spread, Pimento cheese spread, olive nut spread and cheese straws are the MUST HAVES at the co-hosted Derby party we hold each year at a dear friend's house. Also a gal born and raised in horse country :)

I cannot comment to how authentic the above recipe is, but I've made it several times and it is delicious.

Not trying to be argumentative, but that's what makes it a Derby pie (from a born and bred girl from the Bluegrass). I make this pie (not her recipe--mine does NOT use corn syrup and is from the turn of the century) and I can't imagine leaving out the bourbon--I don't taste it at all. But, vanilla is a supplement for bourbon, so you could up the amount of vanilla used, I guess.

You can leave out bourbon, but it takes out a dimension from the flavor. I have a sweet potato pie recipe that calls for bourbon, also, and one year I forgot to put it in, and it turned out fine. My husband doesn't like bourbon and actually prefered it without, so now I make one bourbon-free sweet potato pie and one KD pie with bourbon.

do you have to use the burbon? Because me husband or i do not like the flavor that the alcohol gives.

Amanda .. make some yummy 'bourbon balls' (the NO COOK kind) with that leftover Bourbon. it makes a great hostess gift or christmas present (i think they last forever cuz' of the 'alcohol' content!) I have some good 'ole Kentucky Bourbon recipes if you want one!

Sorry, Frannie, any leftovers were gone by Tuesday. I saw a really similar recipe yesterday in the paper that said to use Kahlua instead of bourbon.

Incidentally, my trip to the liquor store was funny. I don't drink much alcohol, either, and my husband doesn't like it at all. I also made a sweet potato pie that used less bourbon. We went into the store, and I said, "I'm making pies. I'd like the cheapest, smallest bottle of bourbon you have."

It only cost me $3.50, and I have more than enough for next year, and probably the year after that.

(and even though i don't 'drink' alcohol ... i like the 'extra bourbon' baked in!)

So I made this for Thanksgiving and it was a HUGE hit. The great part is that the chocolate chips naturally sink and the nuts naturally float, so it layers itself perfectly. My husband says he'd prefer it with a little less bourbon, but the rest of my guests said "yum!"

Omigosh, that sounds amazing...I might bake it at Thanksgiving. That is one pecan pie with serious attitude.
