Cornbread Salad

3 cups cubed cornbread
3 cups diced tomatoes
1 cup diced onion
1 cup diced green pepper
1 lb. bacon, cooked and crumbled
1 cup mayonnaise
1/4 cup sweet pickle juice

Mix all ingredients together. Sprinkle Parmesan cheese on top. (bet cheddar cheese would be a good subsitute too!)



Hoot 'n' Holler Whiskey Cake

1/2 cup butter
1 cup sugar
3 beaten eggs
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup milk
1/4 cup molasses
1/4 teaspoon baking soda
1 pound seedless golden raisins
2 cups chopped pecans
1/4 cup Jim Beam or Jack Daniels whiskey (even a Japanese whiskey will work)

First take the whiskey out of the cupboard and have a small sip for medicinal purposes.
Cream the butter with the sugar and the beaten eggs.
Mix together the flour, baking powder, salt & nutmeg; add to the butter mixture.
Add the milk.
Put the baking soda into the molasses, mix it up, and add it to the butter and milk mixture.
Add the raisins, nuts, and whiskey.
Pour into a greased and floured loaf pan and bake at 350* for two hours.
Keep leftover cake wrapped in foil in the fridge.
NOTE: If you feel like the need for a frosting, mix the juice of 1 lemon with a little warm water and whiskey and blend it with 2 cups confectioner's sugar.




Apple Cake

5 large, unpeeled apples
cinnamon & sugar (2 t. cinnamon to 1 T. sugar)
4 eggs
2¼ C. sugar
1 cup vegetable oil
3 C. flour
3 t. baking powder
½ t. salt
½ C. orange juice
1¼ t. vanilla

Core and slice apples.
Put in a bowl and sprinkle with cinnamon sugar.
Beat eggs and gradually add sugar.
Add vegetable oil.
Sift together dry ingredients and mix into batter.
Add orange juice and vanilla.
Grease a tube pan, then dust with flour.
Pour a third of the batter into pan. Layer with a third of the apples.
Repeat for 2 more layers.
Bake at 350 degrees for 1½ hours.



PORK AND BEAN BREAD

1 CUP RAISINS
2 CUPS SUGAR (no wonder it was so yummy!!!)
1 CUP VEGETABLE OIL
3 CUPS FLOUR
3 EGGS, BEATEN
1 TEASPOON VANILLA
1 TEASPOON BAKING SODA
1/2 TEASPOON BAKING POWDER
... and here's the 'kicker' ...
1 15-OUNCE CAN OF PORK AND BEANS!!!!

Add raisins to boiling water and set aside.
Mash beans with a fork in a large bowl until very smooth.
Add sugar, eggs, oil and vanilla.
Mix well.
Sift together dry ingredients and fold in.
Mix raisins and chopped nuts and fold in.
Spoon batter into three greased and floured loaf pans.
Bake in 325 degree oven for 50 to 60 minutes, or until a knife inserted
in the center comes out clean.


WHITE CHILI

1 cup egg noodles
1 cup cooked chicken breast
2 cans navy beans
2 cans chicken broth
1 cup water
1 cup chopped onion
1 tablespoon chopped garlic
2 stalks chopped celery
1 to 2 cans green chilis
1/8 teaspoon ground cumin
3/4 teaspoon oregano
1/2 teaspoon ground red pepper

cook and serve with shredded Monterey Jack cheese,
corn/torilla chips ... top with sour cream





SAUSAGE CAKE





1 lb. raw mild sausage

1 c. hot, strong coffee

1½ c. brown sugar

1½ c. white sugar

1 t. cinnamon

1 t. allspice

¼ t. cloves

1 t. nutmeg

3 c. flour

1 c. sour milk (1 t. baking soda and 1 c. milk)

1 c. chopped nuts

1 c. raisins

Mix sausage and coffee together until mushy. Set aside. Mix brown sugar, white sugar, cinnamon, allspice, cloves, nutmeg and flour in a large bowl. Add sausage mixture and then sour milk. Mix in nuts and raisins. Bake at 325° for 1 hour in a 10½ x 15 pan. (I used a 9 x 13 and an 8 in. square pan) (Also, I thought 1 hour was too long—check at 50 minutes.)

Not stupid at all.......I didn't explain well. Yes, the bread is still in the can when you wrap the bandana around the can. To get it out, you cut around the bottom of the can and push it out the top.

This is probably a dumb question but do you leave the bread in the cans when you wrap it in red bandanas

Oh my I am so hungry now! I've made bean bread before, like Ezekial bread. But this sounds just yummy. Will try and report back.

My family has a similar Whiskey Cake, but, Frannie, I love your starter with "take a sip". Ya' gotta make sure it's good, right?

I did that once too..saw it in one of my books I think..and they were a big hit. I havn't made it in years though..will have to again..my kids would get a big kick out of it for sure!

Hey Frannie, You're gonna love this..........!! I have been baking Pork and Bean Bread for years and giving it as gifts. However, and here's the kicker as you say...................I bake it in greased and floured 16 ounce cans - 5 of them - and tie them up with red bandanas. Fill the cans about 2/3 full, stand them on a baking sheet and bake 45 to 50 minutes at 325. They are a big hit!!

That whiskey cake sounds yuuuuuuumy! We're out of whiskey right now but I guess we'll have to make a trip to the liquor store before too long!

Hey Frannie! Just wanted to intro myself. I'm new to this & was just gazing thru all the many list. I'm a homemaker myself & love white chili. Your recipes should great. I'm also an apron collector amongst others. I'll keep watching for your recipes & comments. Thanks, Shannon

Hi gals white chillie.hmmmmm! sound different, never heard of it, but i am going to try it, some say around here i have blue ribbon chillie, (the other kind) with meat. 1\4 cp. of chillie powder, dash or so of tobasco sauce, depending on how hot u like it i spose. I put sweet bazil, and thyme, and also a bit of sage! ginger, and tumeric, all cooked with the hamburger, also the rest of similar ingredients on here!lots of mushrooms, onions,large green pepper ect. i found the ginger seems to help with the tummy gas afterwards for some~ i cook all ing. in with the hamburger, then add sauces what ever u prefer, i use tom. sauce, tom. soup, 1 can, kidney beans, of course! and 1 small can of ordinary beans with tom sauce, sometimes i'll put a bit of kernel corn in also, optional though,i will try the white chillie fer sure sounds soooo yummy any other recipees for the hamburger chillie i would like to have a few to try also? thanks jo~
