This spring I created a container garden modifying the plan from the May/June Mary Jane's Farm for a trash can, and I planted 1 okra plant, 1 japanese eggplant, 2 celery plants, 2 strawberries and 1 sunflower. they all did great and we have been picking here and there. So, for my question, does anyone have suggestions on how to cook okra (other than frying) and eggplant? keep in mind that I have a very small yield and I hate slimy food!

Thanks for your help.

Kelli

You can cook okra with a little bit of vinegar and some tomatoes ..the vinegar takes away the 'slim' that you'll find inside okra. Hubby loves it this way. (add some rice over the side to eat it over if you want, if not..just eat it from a bowl)

The eggplant..yeah, it really does absorb a lot..layering it in lazagna like Diane suggested is really good.

Eggplant is somewhat of a flavor "absorber". We love it in soups and curry and I've even sliced it really thin and layered it in a vegetable lasagna. I believe you can also stuff it, but somehow that doesn't really appeal to me.
Great job on your container garden by the way!

Okra is good in Gumbo or any veggie soup. It acts sort of like a natural thickener.
