I bought a tortilla press from Lehman's some time ago and I have been thinking about putting it to use:) Soooo, anyone know of any good tortilla recipes? Thanks in advance!

Hi, Kelli!

I've made homemade corn tortillas before - go to the grocery store and look in the ethnic aisle for MASA HARINA (I think it means corn flour) and there is a recipe on the side of the bag.

As I remember, it's mostly masa harina, water, and salt!

My ex-husband used to love these but they were kinda time-consuming to make so I didn't do it very often.

Yes, the recipe I use is similar to the one above. I also have that Lehman's press, I love it! I also use it for pierogis, and turnovers.I just spray it with spray oil first the put the ball of dough on and press! easy!

This is one I got off the net somewhere that was great! I love making them. I used oil and it was fine.


Flour Tortillas:

3 cups flour (whole wheat if you swing that way, or all-purpose unbleached)
1 cup water
2 teaspoons salt
1/4 cup oil (I have used butter, rendered beef fat, and peanut oil all with good results)

If using a solid fat, combine flour, salt and fat with paddle attachment of a stand mixer or with a fork until resembles coarse cornmeal. If using liquid oil just stir it up. Add water while stirring with fork or paddle, but DONT over-stir, just until combined. Please use a very light hand or tortillas will be tough. Allow dough to rest while covered with plastic wrap for about 10 minutes to autolyze (this makes rolling the tortillas SO much easier).

Place a large (mine covers two burners) cast-iron griddle on your stovetop and turn heat to medium. Griddle is ready when a drop of water "dances" on the surface. Pinch dough into eight-twelve little balls. Flour your work surface and rolling pin and roll out each ball very very thinly. A silicon mat works great for this, but I've muddled along with just the countertop as well. Cook each torilla about 1-2 minutes per side, until they start to puff and brown.

MaryJane has a wonderful recipe in her Farm Kitchen issue of the magazine that uses her budget mix. It's super easy and really yummy!
