Good Morning FarmGirls; I have 2 acres of white grapes ready for harvest. Besides making wine, jellys, preserves, does anyone have any unique and delicious ideas for using them? I'm particularly interested in main dish or desert recipes. Thanks, MeadowLark

Here's a concord grape pie recipe from Farm Journal's Complete Pie cookbook:

Streusel Concord Grape Pie

Unbaked 9" pie shell
4 1/2 cup Concord grapes
1 cup sugar
1/4 cup flour
2 tsp lemon juice
1/8 tsp salt
Oat Streusel*

Wash grapes and remove skins by pinching at end opposite stem. Reserve skins.

Place pulp in saucepan and bring to a boil; cook a few minutes until pulp is soft. Put through strainer or food mill, while pulp is hot, to remove seeds.

Mix strained pulp with skins. Stir in sugar, flour, lemon joice and salt.

Place grape mixture in pastry-lined pie pan. Sprinkle on Oat Strusel.

Bake in hot oven (425 degrees) 35 to 40 minutes.

*Oat Streusel: Combine 1/2 c. quick-cooking rolled oats, 1/2 c. brown sugar and 1/4 c. flour. Cut in 1/4 c. butter to distribue evenly.

I'm not into grapes too much (too much sugar for me) but I have seen recipes for grape pies in a number of cookbooks and magazines. I wonder if you could make grape marmalade?

Last Crhistmas I became the owner of my mother-in-law's and her mother's recipe boxes. Some of the recipes date back to the early part of last century (1910 and 1920). They are fascinating to read through, and sweet to see how many repeats there were as they shared recipes through time.

Hugs jpbluesky for the dressing recipe! I am going to use it in my Harvest Dinner I throw for my grape picking crew this year, as well as the recipe ideas I got on this post from the other kind ladies. If you would ever like to try new recipes I have an eclectic and great variety of old ( my grandmothers depression era) and new!

Cooked Sweet/Sour Salad Dressing

1/4 cup sugar
1/4 cup balsemic vinegar
1/4 tsp salt
1/4 tsp dry mustard
1/4 tsp minced onion (you can use dry also)
dash of paprika
1 egg, slightly beaten
1/4 cup olive oil

Combine first 7 ingredients in a small saucepan
Bring to a boil; boil 1 minute. (Do not let the egg cook to much; you do not want it to be too solid or white looking in the mixture).
Gradually stir in oil.
Chill for 2 hours.
Yield: 3/4 cup
Toss into salad just before serving.

Also, I found a good recipe for a grape smoothie!
2 cups seedless grapes, any color
3 medium ripe bananas
2 cups (16 oz bag) frozen strawberries

Start with grapes and bananas and half the bag of strawberries.
Blend until smooth.
Add remainder of strawberries a few at a time and continue to blend.
If it gets too thick, add a little apple juice.

I will be sure and check to see if my local library has the Sept. issue Clare; I will also check back issues of Taste of Home sleepless, I would love your recipe jpbluesky for the dressing and those salads sound yummy, I just noticed an article on salads in the Larder section of Sept. 04 House&Garden and MJ's Salade 'a la Fleur is featured with a beautiful photo, Great article on greens.

Taste of Home magazine did a concord grape pie a few years back. You could try doing a search on their site, or email me off this forum and I can dig it out and send it to you. It's very tasy, but time consuming.

Meadowlark - In the Sept. 2004 issue of BHG magazine, on page 238, there is a recipe for Grape Pie using red or black grapes. I would imagine that it could be adapted for white grapes. I'd type it out here but it's quite lengthy. Should be on the newstands, if you're interested!

I use grapes (all types except muscadine!) by just throwing them into recipes I use often. I always slice some in half and toss them in my green salads. They go great with cucumbers and carrots with oriental noodles sprinkled on top.

Another good salad is spinach and green leaf lettuce mixed with sliced grapes, mandarin oranges, almonds, red onion, and a sweeter dressing (I have a good cooked sweet/sour dressing if you are interested).

I also slice grapes and put them into chicken salad, serve it on a bed of greens/lettuce with melon pieces around it, and muffins. The chicken salad includes cooked chicken pieces, mayo, almonds or pecan pieces, the grapes, diced celery, bits of apple, and any other favorite spice or ingredient you may want to include!
