Doug and I were recently introduced to a Mexican drink called Horchata. It is sweet and creamy and very delicious. I made this recipe at home and find it super yummy!

INGREDIENTS

* 1 cup uncooked white long-grain rice
* 5 cups water
* 1/2 cup milk
* 1/2 tablespoon vanilla extract
* 1/2 tablespoon ground cinnamon
* 2/3 cup white sugar

DIRECTIONS

1. Pour the rice and water into the bowl of a blender; blend until the rice just begins to break up, about 1 minute. Let rice and water stand at room temperature for a minimum of 3 hours.
2. Strain the rice water into a pitcher and discard the rice. Stir the milk, vanilla, cinnamon, and sugar into the rice water. Chill and stir before serving over ice.

Horchata is extra yummy when you add some blanched almonds to the blender or use almond milk instead of cow milk. We have a lot of milk allergies in my family so almond and rice milk get used a lot.

Sure Karin! Spread the recipe around! I love it when I can discover something that makes more than just me happy! Next time I make it, I am going to add a little less water and use more milk as it was a bit more watery than I wanted and the recipe calls for way to much cinnamon (now that I have made it) I would suggest using half the cinnamon and just letting it meld for a while.

My son lived in Mexico and horchata and tacos al pastor are his favorite foods from there. Alee, do you mind if I give him this recipe? He would love to be able to make his own!!

My dd who is a Spanish teacher introduced me to Horchata!! I LOVE it - but never have had a "from scratch" recipe before. Thanks Alee!! (PS Tell Nora to watch her mailbox!)
