Today I stewed the garden tomatoes and I realized once again that if I had been a pioneer, I am sure I would have flat out died on the prairie.

How did they can without running water? And paper towels? And a real stove? I love canning tomatoes, they are my favorite, but they are also easy, and without cold and hot water at the tap, and my stove......and air-conditioning going in the kitchen......

It makes me feel so happy, though, looking at those lovely jars of red on my counter. And to know that none of my tomatoes will go to waste for not being eaten fresh.

Do any of you stew your tomatoes too?

Aunt Jenny, would love to have a good salsa recipe. I planted a variety of tomatoes & peppers (hot ones too!) in my little garden. I also have cilantro taking off and 4 plants of celery that I think "look" like celery, at least to me! I figured I'd get some good garlic and onions from a woman who does heritage garlic, at the farmer's market and then try to plant some in the fall. But, now I need to get a good recipe!

It is a good feeling to go down into the basement and see the rows of colorful veggies on the shelves isn't it!

Yes..I do alot of stewed tomatoes. I won't have ripe ones for another few weeks yet..but when I do I do all the salsa I can (depends on the onion and pepper crop!) and then stew the rest. I love having all those tomatoes on hand!!
I agree...compared to our ancestors we sure have it easy!! Air conditioning alone will keep me glad to be born now

I did some like rotels- with jalepenos, onion, garlic and lime juice- we can use them in mexi dishes or add fresh cilantro for salsa. I froze some- when I ran out of canning jars and other ingredients- I scaled them, peeled them and then put in freezer bags- will use in sauces. Today we are dehydrating cherry tomatoes. I also dehydrated 37 large packages of mushrooms. right now we are grating zucchini for bread- to make today and some for freezer. I have bagged up 8 gallon bags of serrano and anaheim peppers. I love knowing that I am saving my husband money by processing all of this food.
