Posted - Jul 06 2008 : 7:47:10 PM Ok I am tired of buying rice a roni and I want to start not doing all that sodium but I love the flavors. We buy white and brown rice and I need to figure out how to make some rice dishes with different seasonings instead of just the brown/white rice.
Anybody got any ideas? thanks.

Posted - Jul 07 2008 : 1:43:16 PM Here is one of my favorite recipes served with rice. You can use just white, just brown or a combination which is usually what I do.
Maple Mustard Chicken
First cook the plain rice according to the package directions seasoning with just a little salt and pepper.
4 Boneless Chicken Breasts 1 C. Gray poupon (I use the grainy mustard) 1/2 c. White Zinfandal (I have used unsweetend apple juice before) 1 C. REAL Vermont Maple Syrup 3 - 4 oz. Butter
Grill or bake chicken breasts until done. Combine Mustard, wine, REAL maple syrup and butter in a small sauce pan. Whisk to combine. Heat until slightly thickend. Watch carfully though because maple syrup can boil over VERY quickly. Scoop rice onto plate and top with chicken. Pour sauce over both rice and chicken.
THIS IS SOOOOOOOOOOO GOOD! Serve it with a nice green salad or some asparagus or brussels sprouts and some crescent rolls! Of course it pairs well with that White Zinfandal and you dont want the rest of that bottle to go to waste!

I wanted to stop buying the boxed rice mixes, too, so I made up a bunch of these rice mixes and put them in the freezer. But, to be honest, I haven't tried most of them yet. We had the spanish/taco rice one night and it was good.

Posted - Jul 07 2008 : 08:36:23 AM We have rice with everything, since I'm the cook and I can't eat pasta. (Why make something you can't have?) I have a Rice cookbook, even, with about 200 pgs of rice recipes and such. You could try Amazon or someplace like that for a similar cookbook.
Love beef strogie w/ rice. The sour cream sauce with the rice is amazing! ;)
Judith, your version of Rice a Roni sounds yummy! I can't have the boxed kind, but your version sounds so much better anyway....Hmmmm...off to scour the fridge for ingred....

Posted - Jul 07 2008 : 05:46:07 AM I make what is called Green Rice, that my grandmother used to make...it's basically white rice made with chicken stock, and you add parsley and chives and whatever other herbs you want to taste. A little butter, s & p and you have a nice accompaniment to any meat....
I also make a LOT of risotto...sometimes for a main meal, sometimes as a side, or to lay a piece of fish over the top. You can do a lot with it and put whatever veges in that you like. Great creamy texture.
I also add black beans to rice, cumin, lime, cilantro and red pepper (both cayenne and bell) for a nice side to mexican dishes.

Posted - Jul 07 2008 : 01:11:29 AM We make our own version of rice-a-roni but we call it pilaf. Put a teaspoon or two of butter or olive oil in a pot, add rice and heat and stir until it starts to change color. Add any other ingredients like finely chopped onion, pepper, mushrooms, herbs, etc. Add the water (I usually use the vegetarian chicken-flavored stuff), cover the pot, turn the heat down way low, and let it steam for about 20 minutes for white rice, longer for brown. If you can find other varieties of rice like red, brown, or wild, they're good for variety.

Posted - Jul 06 2008 : 9:10:26 PM I use rice as a base and make things to go over it alot..for instance chicken in a white sauce with veggies over rice, or meatballs in a mexican or asian flavored sauce (my kids love teriaki sauce) over rice, or hamburger stroganoff over rice. Or for spanish rice I will stir in salsa to cooked rice and then add whatever meat (chicken, burger, roast beef or whatever) into it, or on the side and cheese over..yum. I do fried rice chinese/american style sometimes too..stir fry some fresh veggies, add pressed garlic and chopped green onion, and some white cold rice and scrambled eggs...stir together until hot and add soy sauce to taste..my kids love this. Hope this helps. We eat quite alot of rice.
