 Okay, I have MJ's Budget Mix and I tried for the first time to make the biscuits. I was so excited. I made the batch for just two. It said to use a wooden spoon but I didn't have one so I used a rubber spatula. Which wasn't the greatest. Maybe I stirred the mix too many times. When I dumped it out onto my floured countertop, the mix was still sort of gooey so I added more of the mix and kneaded it a few times and then rolled it out. It was still sort of gooey and sticking to the rolling pin and to the surface which even had flour on it. I added more of the mix. Anyway, the biscuits turned out hard on the outside and okay on the inside. I'm not sure what I did wrong. It's the first time I tried to make biscuits. I guess it's something that gets better the more you practice????

Posted - Jul 07 2008 : 10:12:49 AM Oh Carol, Thank you for posting this!!! My biscuits didn't work because of me. The Budget Mix is great, and I love the flavor of it and the convenience of it. And I love the fact that it's organic!!! It's my lack of knowing how to bake correctly.... LOL but your information will be sooo helpful to me. Can't wait to see the video. I tried to follow the recipe for two in the Farm issue of the magazine. I know I goofed it up somehow... LOL One of these days I'll be a biscuit pro!! Thanks again.

We based our Budget Mix Biscuits on former food stylist Julie Bell's batter biscuit recipe - a Southern favorite that is moist but difficult to handle for some cooks. But if you'd rather make a standard, basic biscuit using our Budget Mix, here are MaryJane's tried-and-true recipes:
No-Fuss-Budget Biscuits 2 cups Budget Mix™ 1 cup milk, buttermilk, or water Yield: eighteen 2-inch biscuits
Preheat oven to 450°F. In a bowl, add the liquid to the Budget Mix and stir until a moist and sticky but not smooth dough forms. Do not overmix. Use a spoon to scoop apricot-sized dollops of batter; use another spoon for dropping the batter onto a greased cookie sheet, spacing the biscuits 1 inch apart. Bake for 10 minutes or until bottoms are a light golden brown. Serve hot.
For traditional rolled biscuits, cut 5 tablespoons cold butter into Budget Mix until pea-sized before adding liquid. Decrease liquid to 3/4 cup. Transfer the smooth dough onto a lightly floured surface and roll out to 1/2-inch thick. Cut out 2-inch rounds. Bake on an ungreased cookie sheet as above.
For no-cholesterol biscuits, use 1/3 cup olive oil instead of butter. Drop by spoonfuls onto an ungreased cookie sheet. Bake as above.
For shortcake biscuits, add 1 tablespoon sugar. Use cream for added richness. Cut 3-inch rounds and drop onto ungreased cookie sheet. Bake as above (yields twelve 3-inch biscuits).

Posted - Jul 06 2008 : 8:42:40 PM Hi Christina! Thanks for explaining about the over mixing. I know I over mixed the dough and each time I added a little more budget mix, I mixed it some more! You're right though, it's a hard concept because I think when you are mixing something you just WANT to make sure it mixed well and there are no lumps in it. I've always done that. But then if it's took sticky can you still roll out the dough? Mine stuck all over the countertop, even though I had plenty of flour sprinkled all over the place!!

Posted - Jul 06 2008 : 8:32:20 PM Carol I am sorry your buscuits got to hard. I am sure it was due to over mixing. I was always taught recently froma baker to keep the dough sticky. Otherwise the more you mix it the more the gluten forms causeing them to become hard. It was a hard concept for me to grasp the first batch I did that way but it worked!

I can make gravy. My grandma used to make biscuits and gravy every morning, and she made a white gravy that was so good. I think she made it in a cast iron skillet with leftover grease from bacon. It was the best. She taught me a lot of things, but never got around to teaching me how to bake biscuits, darn it!!! I sure miss that Farmgirl... P.S. I like your signature quote.

Posted - Jul 06 2008 : 8:15:06 PM HA.. any GRAVY works for him, but he loves a country gravy best.........My best cooking tip is always "learn to make a great gravy" it will save any dish LOL..
Maybe to much budget mix....(?)... try the drop spoon next time and gooey doesnt matter to much.... Hey My son is stationed on the USCG cutter EAGLE - and when they are docked he is at the Academy in New London... but spent time in Baltimore.. Is that close to Glen Burnie?

Posted - Jul 06 2008 : 7:56:08 PM Hi Rene, I'm not sure what I did wrong with these, but thanks for suggesting the drop spoon method. I think I'll do that the next time. Do you think I might have added too much of the budget mix? I guess I added 2 or 3 tablespoons to get it "ungooey". It sounds like you are lucky and haave a great husband!!! I love biscuits and gravy, too. What kind of gravy do you make?

Posted - Jul 06 2008 : 5:40:43 PM Carol, I know biscuits like very little needing and mixing.. and gooey and sticky is OK when making them.. which is why I like to just use the drop spoon method..........One of my hubby's favorite dishes is Biscuits and gravy.. So he know "NO bad biscuits".. I am such a lucky girl (LOL).
