Hi all, again I am back from the dead. As some of you know I had bilateral total knee surgery 12 wks ago and in the middle of a major house remodel...shoot me now!! So, I haven't posted much since no kitchen to speak of yet, so eating out too much. I am doing fine with the surgery but trying to get the kitchen finished.

Anyway, my new upright freezer arrived. So having fun stocking it. What is in your freezer?? I want one of those food savers to suck the air out and prevent freezer burn, anyone like those? If so, what model and brand? QVC had one on the other day but people on the QVC website said it had too many gadgets on it and already breaking down and not sealing. I just wanted something basic but worked great, any out there?? I am looking at the green beans I blanched and froze and freezer burn all over them. My plan is to keep ahead casseroles, stews, soups, stock, etc. so I always have meals if someone is ill, death, or just too busy. My husband says the food saver is another garage sale item in waiting like the Popeil pasta machine. Please let me know about what's in your freezer and do you have a food saver, thanks, Mollie

I have a Vac-U-Seal (whatever the name brand is- I forget right now). We Love it. The bags are a bit expensive...but it will seal almost any type of plastic (as long as it isn't too thin or it can melt through it! We usually go to Costco a couple times a year and the sealer gets a good work out as we separate the freezer stuff into smaller family sized portions. I haven't had any issues with seals breaking or anything like that. I see the same as I have at Costco all the time for a decent price. They are a bit $$$ but SOO worth it.

Also consider maybe a dry erase board of freezer contents if you are worried about losing track of things. We also take a sharpie and write the date on each bag as we put them in. So you could have a board like:

24 packages hamburger at 2lbs
10 rump roasts
15 packages of 2 steaks each
25 packages of 2 chicken breasts each

etc etc etc

Then just erase or adjust number as things get used, and remember to rotate the old to the front when you add new things. I can't wait to get a freezer :D

We used to have a big 31 cubic foot freezer; it was hard keeping track of everything in it. Now I have a very small freezer and stuff gets rotated much more rapidly. I use it mainly for veggies and meat, but always save enough space for a half gallon of ice cream. I also freeze some dried things and home squeezed lemon juice so we can enjoy it the rest of the year.

Hi, Mollie! I didn't know there was another one around the board!

I have a FoodSaver (brand) and I love it! It's a little inconvenient to store and get out for every use, but when I use it I just love it. Lots of times, I make a double batch of whatever (stew, soups, enchiladas) since it really doesn't take much more work once you have all the ingr. out, and freeze 1/2 for another time. Works out great for me. It seems to work pretty well, and I haven't had freezerburn issues with it.

Hmmm..I have lots of bread, rolls, and pizzas in mine. I also have fish, ground turkey, some juices, and bacon. I have a small top opening frezzer in my house along with the one one my fridge. I don't have a food saver, but I need one! I heard there are some good ones out there.
