Anyone have a recipe for a good Thai peanut sauce to go over rice noodles? Something smooth, not too spicy...like the sauces in Thai restraunts. I absolutely LOVE sauces like that. Thanks!

I just made this tonight for dinner! Yum! Got the thumbs up from the fella straightaway. Just stir-fryed some veg, then poured on some of the sauce and let it simmer, then put it over basmati rice.

Next time I'm going to go for lime instead of lemon, add a little chopped cilantro, and cut it with coconut milk. Can't wait to try it again..

Another amazingly delicious way with the Thai peanut sauce (and thanks for your recipe, it looks delish!) is to put it over steamed chard...OMG, is this GOOD!!! Julia served it once and I am hooked on it! Judy

I want to try it over some rice noodles with some veggies, maybe....that's the only way I've had it in a Thai restraunt, but it's SO good that way!!

Oh, easy and a vegetarian cheapskates dream! This is my favorite recipe. :)

1/4 cup peanut butter (I like chunky)
1/4 cup water
1/4 cup soy sauce
2 tbsp lime juice or lemon or whatever you have
2 cloves garlic, minced or a couple of shakes of garlic powder
2 tbsp rice vinegar (I often dont have it so I use plain white and its fine)
red pepper flakes to taste...I like mine hot.
