Hi all,

I am wondering if anyone has a good recipe for a cracked wheat bread.
In Minnesota there is a Catholic university (St. John's) whose brethern would make a cracked wheat loaf and sell it. One of the local grocers purchased the recipe and had rights to make it (called Johnny bread), but they don't make it any longer. It is just wonderful bread and makes the best toast!

The loaf has cracked wheat and maybe some whole wheat flour, but is
made mainly with white flour. Anyone have a recipe that sounds similar?

I made this bread recipe over the weekend and it was absolutely amazing! Soft crumb, delicious flavor, and very easy to adapt to traditional bread recipe (I no longer have a bread machine).
I am thinking now that the Johnny bread that I had some years ago did not have molasses in and may have had some sourdough in it as well. This recipe will certainly suffice until I figure out exactly how to make Johnny bread.

I am sure I can adapt this to a traditional loaf...my bread machine conked out years ago. This certainly sounds like the bread I remember. Thanks for your help!

Hi Jody- This recipe comes from the book Bread Machine Magic and I have used it before.

3/4 cup water
1/3 cup cracked wheat
3/4 cup milk
2-1/4 cups bread flour
3/4 cup whole wheat flour
1-1/2 tesp. salt
2 Tbsp. butter
1-1-2 Tbsp. honey
1-1/2 Tbsp. molasses
2 tesp. active dry yeast

In a small saucepan, heat the water to boiling; add cracked wheat. Cook on medium-High heat for approx. 6 minutes until all the water is absorbed; stir occasionally with a wooden spoon. Remove pan from heat; allow cracked wheat to cool to room tempature.

Place all ingredients, including cooled cracked wheat, in bread machine and press start.
