Here is a simple and healthy way to stuff a mushroom.

Take your portabella mushrooms drizzle the inside with a little extra virgin olive oil and garlic to taste ( I like a lot ). Now stuff with chopped fresh spinach add a little more of the EVOO and salt. Next add shredded mozzerella cheese and top with chopped tomatoes and onions. Grill or bake until tender. YUMMMMMMM

My hubby, who is a real meat eater, LOVED his first grilled portobello! He even said that he'd eat it instead of a burger on a bun! I just brushed it with EVOO, & seasoned it with freshly ground pepper & sea salt. I LOVE sea salt better than regular salt. Better flavor (not as harsh) & lower in sodium.

Another idea for potobellas is to take off the top and brush with EVOO . put on grill or bbq. you could baste with BBQ sauce if you like. When mushroom is grilled to your liking, top with swiss cheese and let melt slightly. Place on hamburger bun and enjoy!! I used to eat these all the time during BBQ season when I was a vegetarian. Made me feel like I was having a burger with all of the other meat eaters!
