Posted - May 20 2008 : 7:09:11 PM I'd like to make some rhubarb jam, but am having trouble finding a recipe for it. I'd like some that is not mixed with strawberry or orange juice or some such thing. We'd like that rhubarb flavor itself. Does anyone have a recipe for me? Thanks so much! |

Posted - May 21 2008 : 09:14:47 AM Yeah, here's one from rhubarbinfo.com: Simple Rhubarb Jam
Ingredients:
5 c Rhubarb 1 sm Jello powder 3 c White sugar Procedure:
Cook rhubarb and then add sugar, mixing well. Add Jello and stir until dissolved. Seal in jars.
You could probably use Mary Jane's chill-over powder instead of the jello (which obviously would be flavored strawberry or something) and get the same results...

Posted - May 21 2008 : 09:09:31 AM I Think..I THINK...my mom just cut up the Rhubarb, cooked it down with some sugar and then added a packet of strawberry gelatin, boiled it a little until it got thick or she just did the rhubarb with plain gelatin, for a thickner, but I like the strawberry. Then she canned it. It was a little sweet and sticky!!! YUMMY!!!

Posted - May 21 2008 : 07:50:45 AM Wow, I am now going to start a rumor about the rhubarb conspiracy. I looked through several cookbooks, including my ancient Fannie Farmer, and i couldn't believe that there wasn't a recipe for rhubarb jam, just all these strange recipes with oranges, strawberries, grape jello, crushed pineapple, etc. Rhubarb has such a distinctive lovely flavor. I'm going to investigate this further, somebody must have a recipe for just the real flavor rhubarb jam, back to my cookbook shelves....Karin
