Pardon if this has already been a topic (I wasn't up for searching through the 99 pages in this forum, wow!), but I am looking for alternatives to the envelopes of 'add oil and vinegar and water and shake' from the store. Don't care for the additives, and I'd rather save the $.

Oooh, Kristine! Sounds scrummy!

I made a sort of dressing recipe one day out of laziness and a desire for something different. I just added a bit of a dried Italian herb blend to some balsamic vinegar and a bit of olive oil in an empty pickle jar, shook it up really good before use, and kept the extra in the fridge. Try different blends of herbs, vinegars, and oils, too, but choose smart packaging. I found a great-sounding hazelnut oil, but the silly thing had a cork covered in a hard, plastic-like wax, and the ceramic bottle broke while I was trying to get to the oil. Arg.

Mmmm...my favorite.
I use 1 cup of good vinegar: raw apple cider w/ mother, or a good fermented vinegar from a local winery in Prosser, Wa.
2 cups good olive oil
1 TB good mustard
1 bunch fresh basil
3 cloves fresh garlic
1 chunk raw onion (1/4 of a small whole)
1 TB dried Italian herbs (or fresh if available)
pinch sea salt
pinch pepper
A good chunk of parmesan cheese, or Feta thrown in if you like.

Mix in VitaMix or blender until smooth and creamy

very, very good. I cannot eat store bought dressing w/o getting sick now.

Every late summer/fall I take all the leftover herbs (mostly Italian) basil, parsley, rosemary, marjarom, oregano, fennel, & some fresh garlic cloves and add them to 2 or 3 gallons of apple cider vinegar. These "steep" for a few months or more. I strain only as I use.

Salad Dressing
1/3 to 1/2 cup herb vinegar
1/2 olive oil
5 drops stevia
1/2 teaspoon salt

This is a regular stand-by in our home. You can add other things, but really no need. Makes a great marinade. Wonderful added to pasta salads. Makes great gifts too.

INGREDIENTS

* 1 tablespoon garlic powder
* 1 tablespoon onion powder
* 1 tablespoon white sugar
* 2 tablespoons dried oregano
* 1 teaspoon ground black pepper
* 1/4 teaspoon dried thyme
* 1 teaspoon dried basil
* 1 tablespoon dried parsley
* 1/4 teaspoon celery salt
* 2 tablespoons salt or less for low salt

DIRECTIONS

1. In a small bowl, mix together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.
2. To prepare dressing, whisk together 1/4 white vinegar, 2/3 cup canola oil or olive oil, 2 tablespoons water and 2 tablespoons of the dry mix.

Hints and tips:
*If you don't want to add the sugar, leave it out.
*You can alter the amount of oil verses vinager to your taste..but I always use the olive oil since it's good for ya.
*Run out of oregano..replace it with marjoram, it's the same thing.


Edited because I forgot to tell you,
You can also add Parmesan cheese, and mustard powder to this ..the ideas are really limitless. The mustard powder gives it a kick, so be careful with how much if you decide to use it.
