Dearest farmgirls, I hope you can help. My husband and I realized recently that many of our stomach issues are a result of red meat. I have decided to switch us to white meat or no meat at all. This is not a problem for me. However, my husband is very picky and LOVES beef. Everytime he imagines a life without hamburger or steak, he gets sad. So what do I feed a cow-lover that will be "delicious and nutritious" (as he always says)? I'm desperate to remove this stuff from our diet because I'm sick of tummy aches! Any advice would be appreciated.

We are trying to eat raw until dinner and start dinner with a salad or raw veggies. The reasoning? Society as a whole doesn't eat enough raw fruit and veggies to rejuvinate their bodies. all of those live enzymes etc... I love how I feel eating raw but struggle to stay with it so I decided today that starting tomorrow it will be raw until dinner and then whatever we want cooked as healthy as possible. I will let you know how my experiment goes on my weight loss. I want this to be a life time commitment and I am just not sure if I go cold turkey into 100% raw if I could stay with it forever. Maybe doing it this way I will end up somewhere down the line 100% raw, then again maybe not. Who knows.

We had some of the same issues, but my "where's the beef" hubby had a hard time adjusting so I started educating myself.. discovered we eat WAY to much "meat" in general as a nation.. SO now we much much less and better quality in the grass fed. Best of luck in whatever you do!

I was just going to suggest this too! DH has a similar problem, and I am a former veggie (to be again, once the tot grows up a bit--her dietary needs are special) so I'm pretty picky. We are buying freezer beef from our neighbor--grass fed--and the difference is night and day! I also 1/2 the amount of ground beef in recipes like spaghetti and we don't notice the difference.

There is such a huge difference in "store bought" beef and "grass fed beef"...and if Hubby is having a hard time you may try to find a good grass fed source.I see you are in KY.. but you can check out my friend Joel's website as he has quite a little info....www.thunderinghooves.net and also Jo Robinson's site www.eatwild.org - they will have some locals ranchers..

My man and I had the exact same problem. My parents took us out to a lovely steak restaurant one night, and both of us were pretty sick afterwards. We decided to do the same as you, but we still occasionally eat well-done cheeseburgers and stir-fried beef. Brisket or corned beef are usually ok, too. Lucky for me, my man will eat tofu, so that's always an option. Here's what I've found to be tasty and healthy alternatives to red meat:

chicken
roasted, stir-fried with veggies, baked with BBQ sauce, baked with lemon juice and basil, chopped up and thrown into a pot of rice, sauteed with butter and mushrooms...

pork
roasted tenderloin with guava jelly glaze, marinated and grilled, "stewed" for tacos, fajitas (I've got a really easy, hard to wreck recipe from my Mama if you're interested)...

tofu/meat alternatives
marinated tofu, deep fried tofu with soy sauce, stir fried tofu with veggies and rice, garden burgers (try the black bean one. yum!), and lots of other non-meat alternatives.

Please feel free to ask for any of my recipes/ideas. I love cooking, and love feeding hungry people.

Oh Rachel...I know it's hard, but my husband decided on his own that he can't digest beef anymore. And being sick enough times during the night helped him decide that he doesn't want it very often, if at all. We usually eat fish, pork and chicken--and the possibilities are endless! Every now and again he'll say he wants a burger and might eat a few bites, but tosses it away.

If you'd like any help finding recipes, just give me a holler...I love to cook and I cook for the most finicky man alive--and he eats everything I make :) We usually eat very "fresh" ingredients, lots of herbs, and very little fat...Gosh, my wheels are already turnin'...Honey crusted pork tenderloin, Chicken stuffed with oregano chili butter, tilapia with moroccan herb sauce....
