Didn't have much in the way of food in the house last night, and I wanted to use up what we had....so, a few weeks ago I bought some Chipotle Mustard, and I mixed the mustard, Bev's honey and a bit of fresh lemon as an emulsifier and brushed it on boneless skinless chicken breasts. Seared them in a pan on the stove top and then baked them at 350 till done.

Absolutely yumolicious, and easy to boot. I served the chicken with roasted potatoes with fresh rosemary, wilted spinach and garlic and fried apples.

Jonni- lol, no- but did it "skin on" since it was a whole chicken- so I figured if it was bad to my tastes then I could always pick off the skin! LOL Hubby really liked it and actually I think the mustard taste mostly cooked away.

It is a really good mustard...and like you, Lisa, I eat mustard on almost anything!!!! ESPECIALLY sausages and hot dogs....wish I was near a stadium right now, actually!!!!

I just pulled it from the fridge...it's made by Silver Spring, 9.5 oz. $2.99. It has a little "ribbon" on the label that says "Silver Medal, 7th Annual Napa Valley Mustard Festival", which, is a worldwide competition according to the fine print ;)..the parent company is Silver Springs Gardens, Inc., Eau Claire, Wisconsin.

Ooh, Jonni, that sounds so good. I didn't even know there was a chipotle mustard. I love mustard. Certain dogs (kielbasa, italian, german) that is all I put on them. And those big fat soft pretzels dipped in mustard - yum yum! My mouth is just watering imagining those same pretzels dipped in chipotle mustard. I gotta find that stuff!

Jonni - Thanks for the idea. I played off of it for our chick dinner last night.

Mixed raspberry honey mustard, orange marmalade and fresh oj to make a marinade and sauce. When it was baking the honey and marmalade sugar carmelized and got really thick and gooie and yummy. After I sliced the chick I poured the thickened sauce over the top. If I had been serving rice we could have poured it over the rice. Served it with potatoes, roasted beets and salad.

I think I'll be doing this more often because I found 6 jars of different mustards in the fridge - must be left over from some party.

Amazing what you can do with just a few ingredients.

Jonni- I just really don't like the mustard taste. It could be $1 a jar stuff to $20 a jar stuff and it would still make me cringe. I haven't ever liked mustard, but at least now I am learning to tolerate it. Maybe if another 2-3 decades pass, I might actually work around to liking the stuff.

Are you really? You'll be happy to know that it's WAY more chipotle than mustard :) Can't think of the brand right now, but it was a "silver medal winner" at some mustard competition--bet that's one even you'd stear clear of, Alee!!!!

I love mustards...of all kinds. Even the ones that's are so strong with horseradish that they burn your eyes!!!
