I don't have a canner (yet!!!!) but can I crush the tomatoes and put them in quart bags with some seasonings and freeze??

We freeze tomatoes every year. After picking the tomato off the vine we open it up and run our fingers through it to "de-seed" it. I prefer to take the skin off before freezing in case I want to make sauce out of it later!

Want it even easier Heather? I go out at the end of our season with a plastic bag in hand and pick off ripe tomatoes, put them in the bag and put the bag in the freezer. When I need a couple or a few for sauce/stew/soup, I take them out of the freezer, run under warm water until the skin slips off and put them into whatever I'm cooking. Doesn't get much easier than that!!!

Yes, I was going to crush them anywho. I am trying to make things easier for myself!! HA!!!

Yes, but any whole tomatoes will be mushy when you unfreeze them so they will need to be in sauces- not sandwiches, but if you are going to crush them- that is probably where they would be anyway!
