Posted - Apr 30 2008 : 4:04:15 PM I don't have a canner (yet!!!!) but can I crush the tomatoes and put them in quart bags with some seasonings and freeze??

Posted - Apr 30 2008 : 6:13:13 PM We freeze tomatoes every year. After picking the tomato off the vine we open it up and run our fingers through it to "de-seed" it. I prefer to take the skin off before freezing in case I want to make sauce out of it later! ~Tricia

I go out at the end of our season with a plastic bag in hand and pick off ripe tomatoes, put them in the bag and put the bag in the freezer. When I need a couple or a few for sauce/stew/soup, I take them out of the freezer, run under warm water until the skin slips off and put them into whatever I'm cooking. Doesn't get much easier than that!!!

Posted - Apr 30 2008 : 4:11:12 PM Yes, but any whole tomatoes will be mushy when you unfreeze them so they will need to be in sauces- not sandwiches, but if you are going to crush them- that is probably where they would be anyway!
