I posted a recipe for low-sugar strawberry-rhubarb custard (using Splenda) on my blog tonight.

I picked the rhubarb today - there were huge seed stalks on every plant. It's only been a week or so since they came out of the ground, it seems, but we've had very warm weather the last week.

Last year I only had a seed stalk on one of them. Does anyone know why they form seed stalks? Is it the weather?

Is the best thing to do, just cut off the seed stalk? Does it have any affect on growth?

I am on my way to copy this down. I love rhubarb, especially with strawberries.
Warm weather will cause plants to bolt early. Karin (the other Karin!) is right- cut the seed stalks off. We had a huge rhubarb patch back home. I remember my brothers and I sitting in the patch, picking the stalks, chewing away and seeing who would pucker first. It was usually a tie. lol

Lucky girl to have some rhubarb right now! It is important to cut off the seed stalks because they kind of drain the energy from the rest of the plant. I always remember my tiny mother telling me this, we always had rhubarb in the garden when i was young. I have some here, but it has been moved a couple of times so it's kind of wimpy. I'm going to beg some fresh horse manure from the neighbors, that's another thing my mother did - she swore that rhubarb loved fresh horse manure, and it worked. Thank you for posting that recipe, can't wait to try it....Karin
