I am in a major lunch rut and need some help.

Due to gas prices and prices in general I have been eating lunch in my car at work instead of going to a restaurant to help keep to my budget. I am also trying to not run around to the stores and browse which usually ends up in spending some money even if it’s just for a soda out of a machine. I do have access to a microwave in the break room if I swing by there before heading to my car. I am just out of ideas and motivation to keep doing this, and I need some farm girl help. The things I have been taking are, wraps made with chicken or turkey, crackers or chips, and a sweet, PB sandwich, veggie sticks and dip, Chili and crackers, Salads (not my favorite) and Texas caviar and chips. Ok gals keep me on track budget wise and help me get some lunch time motivation!!

Thanks for the great ideas and encouragement. You guys gave me some new motivation!
But I must say I am almost embarrassed, some of the best sounding things to me were so simple.....I just didn't think of them.

Today I am having Refried beans & Rice on Nachos, a yougurt and cookies for afternoon break.
I do always pack a cloth napkin and "real" silverware, it makes it just a little bit more special.

tuna salad stuffed in a tomato. also, instead of crackers....rice cakes (they come in so many flavors now days) chunks of cheese (a chunk of cheddar, one of swiss and maybe one other?? for variety) and some grapes, sliced oranges and apples....oh and a roll and you'll feel like you're in France!!! take a cloth napkin, too, and it'll feel a little more romantic!! have a great day!

Pasta salads........yogurt with granola.............a simple bowl of cereal........leftovers from dinner..........

I'm a huge fan of Quinoa now and have always liked bulgar wheat. Both are still really tasty when eaten cold in salads especially with salted sunflower seeds!

Ooh, Sage. I want what you're having!

Bridgette, I get bored with my lunches really easily, too. Is there a specific reason salads aren't your fave? I used to hate salads as a kid, but it took me years to realize I hated them only because my mom only served them with blue cheese dressing (ick!). Since I've discovered vinegar-based dressings, or even just balsamic vinegar and olive oil, I adore salads. Especially a really good chop salad, made with chicken, avocado, salad greens/lettuces, tomatoes, thin sliced red onion, and balsamic vinaigrette (hold the blue cheese and bacon.) I don't care much for raw tomatoes, but I eat them for their health benefit, so in my salad they go. But what floats my boat may sink another's.

I also love cold pasta salads made with olive oil instead of mayo, with chicken or salmon, with some green onions and sun-dried tomatoes (packed in olive oil) chopped up and tossed in. You can get decently priced canned, precooked salmon to sprinkle on top, and if you only use half the can, that'll make it go even farther. Bagels with really tasty and flavorful cream cheese or spreadable cheese is also a great treat. Think herbs and chives. Or even a spirulina shake. One of those mixed with milk usually fills me up for 4 hours or so. http://www.spiru-tein.com/

If you like fish, try something different from tuna, like smelt, anchovies, or sardines. Not only are they plentiful and cheap fresh, but it takes pressure off of dropping tuna populations (as well as other big fish).

Ok, now I'm hungry. Time for a midnight snack salad.

Ahh good summertime lunches...cut up some cheddar cheese, some pepperoni, a few pepperocini peppers, small salad or just some carrot and celery sticks..with various crackers. Ranch dressing for dipping it all..yummm!! Add a flat bread once in a while instead of crackers for a change.
and for munching...homemade granola, fruit, peanuts.

I always make one extra serving of dinner for the hubbies lunch the next day. Works great.

Don't always think of 'lunch' items..think breakfast too..boiled eggs, string cheese, ham cubes. FRUIT! lol..I'm in a fruit mood..can you tell!

If you have leftovers from dinner that would be good. I make homemade pimento cheese...Cheaper to shread your own than buy the already shreaded one and it tastes better too...And soup is always filling and good for you

Seriously consider MaryJane's food! You can boil water in the microwave or even get a cheap electric kettle. They are nutritious and filling! Most commercially made food has the fiber taken OUT which leaves you hungry to eat more and so they sell more food! MaryJane's foods are wholesome and nutritious "Fast Food that isn't Junk" and there is a variety of types so you can have a new food every day of the week. :D I especially like the Wild Forest Mushroom Couscous. Nachos- just throw it all together at work right before you eat it!!!
