i love grilled and/or broiled salmon very simply prepared. i am addicted to meyer-lemon extra virgin olive oil, lime extra virgin olive oil and orange evoo. i just sprinkle the salmon with sea salt and cracked pepper, drizzle one of the flavored olive oils and let marinate for about 10 min. (more if you have time)
let grill about 2-3 min per side until done. i then drizzle a bit more oil and serve.

how do you prepare salmon?

That olive oil sounds so good. I'll check it out. I did make the salmon last night and it turned out SO good. In a little bowl I put some olive oil, the sea salt, and some garlic pepper. I brushed it on the salmon and grilled it. It was SOOOO good. The oil seemed to keep it from drying out on the grill.

I was at our farm and had limited access to ingredients one weekend - I used a mix of brown sugar and brown mustard as a "barbecue" sauce before grilling and it was SOOOOOO good - very simple and easy. Tje sugar carmelized and made the outside just a little bit crunchy/sweet/savory. Served with asparagus and brown rice with herb seasonings.

one more thing..the meyer lemon olive oil with champagne vinegar, sea salt and fresh cracked pepper makes an amazing salad dressing!!

hi brenda..you could make your own..gently heat olive oil with lemon zest..cool, strain and use...but only make a little bit cause you have to keep in the fridge and it does not last long. i prefer to buy from an olive oil producer..they normally press the lemon peel when they press the olives so the oil is not heated..remains extra virgin..should be kept in a cupboard away from light...and lasts longer. i love meyer lemons..try round pond which is located here in the napa valley. they make wines and olive oil and vinegars...their meyer lemon olive oil rocks!

Question...do you buy the lemon olive oil, or is it something you make?

I'm grilling salmon today and serving with wildrice. I could add lemon to some olive oil along with the fresh ground pepper and sea salt-- that would be nice.

I love salmon too. The other night I had it at a restaurant served on top of seaweed salad in a sweet and sour dressing, and it was scrumptious!!! Never had seaweed before, but it was goooood.

I make my salmon like this:

Place salmon pieces in a greased baking dish.
Salt and pepper to taste
Layer on top of the salmon: sliced yellow squash and zuchini, sugar snap peas in the pod, onion slices, chopped tomatoes, chopped green pepper, thinly sliced carrots,or any fresh vegetable you prefer.
Sparingly pour teriyaki marinade and lemon juice over all ingredients
Dot with pats of butter
Add a dash of sweet basil over all
Cover tightly with foil and bake at 325 for 35-45 minutes.

I'd be glad to share. It's really super simple--I think I based it on a Everyday foods recipe from a few years back.

4 tablespoons olive oil
1 medium red onion, chopped
2-3 large garlic cloves, chopped
1 teaspoon (or to taste) red pepper flakes
1 teaspoon ground cumin
salt and freshly ground black pepper
2 limes, juiced
3 tablespoons honey
1 teaspoon chili powder
4 6-oz. salmon fillets
1 red bell pepper, cored, seeded, and chopped
1 10-oz. box of frozen corn kernels, defrosted
1/2 cup chicken stock or broth
1 15-oz. can black beans, rinsed and drained
2 to 3 tablespoons fresh cilantro leaves, chopped
6 cups baby spinach


Saute the onions, garlic, red pepper flakes, salt, and pepper in about 2 tblsps of olive oil. Cook, stirring occasionally, for 3 minutes.

While the onions are cooking, preheat a medium nonstick skillet over medium high heat with the remaining olive oil. In a shallow dish, combine the juice of 1 lime, honey, chili powder, salt, and pepper. Add the salmon fillets to the lime-honey mixture and toss to coat thoroughly. Add the seasoned salmon to the hot skillet and cook until just cooked through, about 3 to 4 minutes per side.

To the cooked onions, add the bell peppers an corn kernels and cook for 1 minute. Add the chicken stock and continue to cook for another 2 minutes. Add the black beans and cook until the bans are just heated through. Remove the skillet from the heat and add the juice of the second lime, the cilantro, and the spinach. Toss to wilt the spinach and adjust seasonings to taste.

Serve salmon on top of the black bean and corn salad.

Let me know if you like it--it's sortof a weekly standard in our house :), especially when the weather warms up.

oh jonni..
your recipe for salmon with the corn and black bean salad sounds so yummy..i have to try and recreate it soon..how many times can i serve salmon in one week? any special tips for that vinagrette??..sounds amazing!

Right now, honey, lime and chile powder (a little s&p) and then sear in a pan and bake for 5 minutes or so, and put over a black bean and corn salad with fresh spinach, red onion, red bell pepper and a lime, cumin cilantro vinagrette.

Yours sounds wonderful and easy for a yummy afterwork dinner.

Other fish--I make a mango fruit salsa, or green chili-lime-garlic butter.
