So, what have you been doing in the kitchen lately? I have been spending most of my days outside in the garden, but have made a few things for supper that were pretty good.

Monday we had Garlic Chicken (http://allrecipes.com/Recipe/A-Good-Easy-Garlic-Chicken/Detail.aspx) with roasted cauliflower and green beans with onion.

Last night we had tostadas and green rice (http://www.recipezaar.com/52025). The rice was really good, but the tostadas were so filling that we didn't eat much of it, so some went into the freezer. I hope that works out, I have never frozen rice before.

I think that tonight we are going to have Kielbasa with White Beans and Tomatoes, http://www.recipezaar.com/58823.

I have been making my menus with internet recipes the last couple of months and have found some real keepers. I also like it because I used to have lists everywhere from all my different cookbooks of things I wanted to try, but now I just put them in my "cookbook" on the website and go from there. So simple!

So what have you been making?

Homemade French Bread....YUM! I like to make a double batch and freez the extra loaves, that way I can just thaw them out when they are needed!

I cut my loaves in half, butter them (with lots and lots of butter!), and put Garlic powder and Oregano on them for Garlic bread. I put them in the oven for a few minutes on broil and they are ready to eat!

Little loaves of tasty stuff for school, neighbors, thank you gifts. Got a bunch of mini loaf pans for a steal a while back (79 cents ea!) and made little brownie loaves, banana bread, cranberry bread, etc. I gave most of them away because I'm trying to work out and lose weight. :-)

Jonni, I'll be happy to share any Persian recipes you are interested in. Due to the length of the recipes, please let me know what you are interested in. Otherwise, the cookbooks I use are the following: "New Food of Life" by Najmieh Batmanglij (she was just on NPR News giving an interview about her cookbooks)"A Taste of Persia" also by her and "The Art of Persian Cooking" by Forough Hekmat.

I could live off of bread (all kinds)....although I would be as big as a house.

I haven't been cooking or baking as much as usual, since the weather has finally broken here, we have been busy in the garden.

Tonight I am making herb chicken breast and salad for dinner...with salad greens grown in our garden.

I can see how bread making would not be big on the priority list!
I love bread too much. Especially flat breads. I could eat tortillas until I bloat up and die, but the shortening in them is something I can't bring myself to do anymore. (uless it's freshly rendered pig lard from someone I know)
Now it's a good quality olive oil or even coconut oil in flat breads. I'm hooked, and so are all the kids and hubby.

That's something I don't do, is make breads (flat or otherwise)....I've done it before like on a Saturday, but working full time and it being just the two of us, we simply don't eat that much bread, unless it's baguette with roasted garlic in which case I could eat it every night!!! It usually takes a 2 weeks to even get half way through a loaf, and then the rest goes to the birds!

I really do love everyday cooking though. It eases my spirit after a long day at work and the creative juices start flowing. Nothing better for me!

That sounds fun...I LOVE to do flat breads using all kinds of different grains. Buckwheat flat bread is yummy! I mean the real, dark kind. Not proccessed stuff. I grind my own.

LOL..ohh I love doing regular day to day cooking myself..it's the bones of the kitchen, but ohh do I love to experiement when I'm in the mood! :) Sometimes my experiements are simply, OLD OLD recipes done in very old fashioned ways, I challenge myself to see if I can do them.
Here's a way out idea, this is how the 'pecan flour' idea came about. I think...Caveman..they didn't have bread. Or did they? Did they collect nuts and grind them to mix with water or whatever to make a flat bread, cooked on a rock?? See..that's how my mind would think, and it's something I'd experiement with in the kitchen. I know..I told you I was strange!!

I have like usual: kefir, komboucha, and sourdough starter. I think the koumboucha will have to go for awhile though...too many things to keep alive! Not to mention the children and animals on this ranch *U*

My oldest daughter has been making lip butters in the kitchen, and I have been making alot of soups since it is still so cold here! Can you imagine! It's been snowing, hailing, and raining when we typically have sunshine and warmth this time of year. Exasperating. Did I spell that right?

Friday we will be cooking African food. We have a group that meets monthly for a potluck and project presentation of different countries. It's a homeschool group, and this month we have all been studying South Africa. The kids take turns picking the country.
The men all come when they can becasue of all the food! *U* ha ha.

I'm sorry, Toni...it isn't everyone's favorite fish, that's for sure! I love making fish of any kind because it's so darn quick, after working all day. Come on over!!! Kentucky is right next door to Indiana :)

There are plenty of ways to sneak veggies into breads and muffins, I think. One of my favorite's being carrot!!! You could also put raisins or dates or even dried cherries or cranberries in them. Mmm. Also pumpkin scones and muffins and zuccini of course. Also butternut squash. Wow. I'm making myself hungry and lunch is still more than an hour away!!!

Um, Jonni? Can I swing by for supper tonight? That salmon sounds awesome, and since it makes my husband gag, we don't eat much of it here.

Aunt Jenny, I like to hear about your day-to-day cooking, too! I think that I am going to have to start making more of our bread, too. My toddler has decided that bread and muffins are all that he needs to eat, so I have had to find ways of getting veggies into the muffins. And he is happiest walking arouns with a slice of wheat bread in his hand. I guess he gets that from me...

Sage, your experiments sound fun! Let us know how the pecan flour turns out. I think I saw a recipe a few days ago that used pecan meal for something, but I can't think of it right now. You are so lucky to have productive trees, I love pecans, and they are so much easier to shell than the hickories we have around here!
KYgurlsrbest Posted - Apr 23 2008 : 07:40:21 AM
Oh, thanks, Sage! That sounds yummy--sure wish I had a pecan problem! They're my husband's favorite nut--he picks them out of all of the mixed nut jars and leaves the rest for the rest of us. He would really like that recipe, I think!

Let me know how (if) the flour works....great idea to use them up. I hate to see things go to waste, too.

I have been baking bread every couple days. With the price of the bread I like best going up almost a dollar a loaf in the past couple months I decided to go back to making ALL of our bread..keeps me busy for sure since my kids will come home from school and devour a loaf of homemade bread for a snack with milk. (they don't do that with store bread) aI grind the wheat myself, but I do a #10 can of wheat at a time and store the flour in the fridge in a big gallon glass jar so that lasts about a week. I am way stocked on wheat so this is a good thing...really cheap, really good bread. And the kids are loving it.
Besides that I am just doing regular everyday cooking. I will be making some cookies called Kiwi bisquits for Travis' class this week..he is doing a presentation on New Zealand for his "Country report" the recipe is easy...basically a shortbread choc chip recipe. (he was bummed that there is no actual Kiwi in them..haha)
I love to cook, but seems I do alot of regular day to day cooking and not alot that is exciting lately!

Ohhh Jonni..I just saw a recipe for salmon using pecans and honey..and another using bread and pecans and was thinking of making that tonight! Let me see if I can find it again and give you the link!!
Ok ok ..here ya go..both recipes:
http://allrecipes.com/Recipe/Salmon-with-Pecan-Honey-Glaze/Detail.aspx

http://allrecipes.com/Recipe/Alaska-Salmon-Bake-with-Pecan-Crunch-Coating/Detail.aspx

I've got TONS of pecans! (egads, we have 4 pecan trees in our yard, and last year was a bumper crop! I'm still shelling pecans!)
So did a search to try and find something to use them in (besides pie)..and possibly making a 'flour' out of them..which is probably a next experiement for me! :)
I enjoy cooking..I enjoy being in the kitchen..doing things the old fashioned way too..kneading bread by hand, rolling out noodles..but I've got a feeling I'm among friends here! :)

Dawn, Persian food is wonderful...and you're right about most middle eastern dishes in that there really ISN'T a shortcut! I'd love to have some of those recipes if you are ever inclined to share :)

I've been making a lot of Persian dishes this month. My father-in-law was in from southern CA earlier in the month & that got me going. I keep telling my husband I need the "Cliff Notes" version for these recipes! Like everything to do with the Mideast, they are long, complicated and have tons of ingredients. There just doesn't seem to be any shortcuts with Persian food!

I've also been making some yummy French pastries for desserts. I decided to cut back on those though with swimsuit season right around the corner!

Me too, Sagewood...I'm always in the kitchen (and I love that!). Saturday I made two homemade pies (sweet potato and apple) for our farmgirl gathering at the Burlington Antique show, and then Monday night I made chili rubbed pork tenderloin, steamed asparagus and stuffing (blah--dh's favorite). Tonight feels like a fish night. I've got some salmon in the fridge and I think maybe I'll coat it in honey, cumin and chili powder and grill that up, and make a corn/black bean salad. Last night I did't get to eat dinner (even though I REALLY wanted to make a burger and sweet potato fries) because my lonely neighbor gets to talking and even though I said I had to go, it never seemed to matter :)
