Posted - Apr 23 2008 : 10:59:03 AM I have seen xantham gum at Sprouts and Whole Foods. Also, Bob's Red Mill has a fantastic inventory on their website, xantham gum included. It's on the pricey side, especially when you see what a tiny bag it is, but a little goes a LONG way.
I have gotten great moisture and taste from the rice/corstarch bread, but it can be tricky to get a good rise out of it. It just doesn't have the same stretch to it that wheat flour does. It can be a little temperamental, so be patient-- your first loaf isn't guarenteed to be a winner. ;)

Posted - Apr 23 2008 : 06:12:37 AM Molly, No I am not gluten intolerant persay, I am an O bloodtype. I am doing the bloodtype lifestyle change. So I am not allowed to eat wheat gluten. I bought rice flour....and my husband wants bread. So I thought I would ask the experts....But I am not sure where to get xantham gum. I do love waffles made from rice flour...They are crispy on the outside and nice and fluffy on the inside...Good for belgium waffle makers...yummy Deborah

Posted - Apr 22 2008 : 8:28:33 PM Hi Deborah, are you grinding your own grains for bread? I just purchased a Damant Grain mill (like the one in M.J. magazine). I haven't tried rice flour yet, but thanks to your question, I'll give it a try in bread too.

Posted - Apr 22 2008 : 09:36:32 AM I use just about any recipe that calls for wheat flour, and simply subsitute a combination of rice flour, cornstarch and xantham gum for the wheat flour. If the recipe calls for 2 cups of flour, for example, I would instead use 1 1/2 cups rice flour and 1/2 cup cornstarch with an additional teaspoon of xantham gum. I've had mostly good success this way. Are you gluten intolerant? One of my daughters and I are, and I've come up with some doable solutions. Let me know, we could trade some recipes and ideas!
