Has anyone ever canned okra? I have grown it but prepared it by rolling in a cracker crumb/egg mixture and fried it. YUM! I love pickeled okra. I grew up next door to a lady from Oklahoma that grew them in her garden and pickeled them. They were out of this world! There is pickeled okra sold here called Talk o Texas that is good, but not as tasty as homecanned. I have a real craving for some! Any recipes floating out there?

Did you know there is also an heirloom variety that is red. Slightly bigger pods on these stay more tender, but you still have to stay with it. When these pods dry, they split but stay together and make good filler for dried flower arrangements.

Forgot you can make it in Gumbo (#2 ingredient just about) and the classic fried.

We also make a soup base with tomato, okra , corn and a litle beef. this freezes nicely.

I've canned it a few times. It's really easy.

Take your boiled jar and place the washed/clean/dry okra in it. It's best if it still has 1/2" stem attached so no skin is breached. Pack them all going the same direction. Boil straight or apple cider vinegar and pour over okra in the jar. Be sure okra is packed tight and fill liquid so it coveres all the okra. Seal the jar and process. OR you can use the regular pickle spice recipes. I've had tasty success converting the bread/butter and dill pickle to okra.

pickled okra .. great memories .. yep! the grocery store kind! when my family would go grocery shopping together .. we'd head straight for the 'pickle aisle' .. and by the time we got to the check-out counter .. we'd be putting an EMPTY jar with only the juice on the counter! we always kept it to ONE jar of pickles per shopping trip! even when the girls in single 'digits' (4 to 9 years old) they LOVED pickled okra. i even like the 'slimy' kind! (but the rest of the family wouldn't go near it unless it was pickled!)

I tried growing some here last year and plan to not give up trying, but didn't have luck at all.
I personally don't enjoy okra in tomato sauce but some do. It is too slimey to me that way. I like it fried (cut into rings and rolled in cornmeal/flour seasoned mixture and fried in butter/olive oil. Yum!! Or pickled.

I bought some okra seeds lately. It is spring here, not sure if we have the right conditions or not for it. I would love to know what to do with it, all I have in mind so far is maybe a tomato sauce.

I love pickled okra too, but have never lived anywhere you you could grow it well enough to get any to can up. They don't sell it fresh in stores here ever too..wish they did I would pickle some! I love love love it! When I was waitressing in Idaho years ago I ate way too much of it every single day..we had it on the salad bar and I could stay out of that bucket every time I had to go to the walk in cooler for something...I probably owe them a bucket of okra!!
