Posted - Sep 13 2005 : 5:09:19 PM These are two store bought favorites of my children and we really would love to make our own "homemade" ones. Do any of you farmgirls have a wonderful recipe?..I "KNOW" you do. These cookies are such staples to me and I have never heard of anyone making them from scratch. Wonderin' why? It can't be hard, can it? I've checked online but I want someones tried and true recipe. Let me hear from you.

Homemade Animal Crackers
1/2 cup oatmeal
2 tsp honey
1/4 to 1/8 tsp salt
3/4 cup flour
1/4 tsp baking soda
1/4 cup butter, softened
4 Tbsp buttermilk
Do not grease cookie sheet. Grind oatmeal in a blender until fine. Add honey, salt, flour and soda. Cut in butter. Add buttermilk.
Roll dough very thin; cut out with animal cookie cutters. Bake at 400 degrees (F) until brown, 10 to 12 minutes.

Put oven to 350. Stir 1/2c sugar with 2 egg whites and add a pinch of salt.When the sugar disappears into the egg add your1/4c butter and 1/4c flour and 1/4t of vanilla.Beat em until smooooooth. Drop the a teaspoon of the batter onto a greased cookie sheet. Bake until the cookie gets a light gold around the edge say 5 minutes. Shape the cookies into your lions and elephants and bears with ice or nut pick. Let cool and eat a 2dozen. Must be small critters? |

I have made honey graham crackers with MJ's recipe by subbing in 1/4cup honey with 1/4brown sugar, but never made them with out the brown sugar in them. I know when I cook with honey and I sub a lot, I use ~3/4 cup for a 1cup of white. And if I am subbing for brown sugar I add a little molasses to make it 3/4c for the darker taste. Hopefully I'll be back to cooking in a few weeks once the cast is off and I can MOVE!!! I'd like to try your grandmother's recipe as well, how interesting to form the cookies after they cook...mine would look like playdoh blops at best! But, hey, worth an experiment. I also have very fond memories of the little red box with the string. Over the past several years I've also been able to collect a few of their tins. Reproductions but a childhood comfort to me all the same.

First you got to make MJ’s crackers. Then crush em! Making about 2cups=1 lb right. Before you start mixing throw your 12oz chocolate chips or 1 Hershey Bar into a pan on low to melt.Then cream together a jar of peanut butter which must be like 2 cups, I think mine was 18oz jar so that is close enough with 1 cup of butter.When you get it smooth, add a box of confectionary sugar ~2cups=1lb, and beat it smooth then mix in MJ’s graham crackers. Press into a brownie/rice krispy treat like pan.Then pour the melted chocolate over and cool for a couple hours by popping it into the frig it makes cutting the bars easier.
I never made Animal Crackers. I always got them for my boys while I grocery shopped. The fun part for me growing up was having my own box with the string. I have a recipe in my granny's cookbook but it doesn't cut them out you are supposed to pop out of oven and shape em? Let me know if you want it. I have no idea if she ever made them says like Barnum's: sugar, vanilla, egg whites, flour and butter?? |

Graham Crackers 3 1/2 cups whole wheat flour 1/4 teaspoon salt 1/2 cup brown sugar 1/3 cup instant nonfat dry milk 1 1/2 teaspoons baking powder 1/4 cup oil 3/4 cup water
Combine flour, salt, brown sugar, dry milk and baking powder. Mix oil and water together. Add to dry ingredients and mix well. Chill dough in refrigerator for 1 hour. Divide dough into thirds. Lightly dust each third in flour. In between layers of waxed paper, roll each third out until about 1/8 inch thick. Discard top layer of wax paper. Cut into 2" squares. Lift crackers off bottom waxed paper and place on lightly oiled cookie sheet. Prick patterns with a fork. (You can get creative and use the initials of the children who'll be joining you around the campfire.)
