Is anyone here eating a vegan diet?? Alee how is your diet change going?? You mentioned a book Skinny B****es??? Is this about a vegan diet?
Anyway, I have been eating a lowfat vegan diet- focusing on lots of raw greens, fruit, cooked beans.. Basically the Eat to Live diet by Dr Fuhrman. I have lost 8 lbs in a little over a week..I haven't felt this good in I don't know how long. I am satisfied all the time. I don't have to count calories. I make huge batches of green smoothies in the morning and this is what we all have for breakfast and then I have the rest for lunch. I have something cooked for dinner- ideally I would have a salad too but I haven't gone shopping yet.
I am so excited.. I had gotten sooooo tired of meat and dairy on the atkins diet. and I started gaining weight.. I had stalled for 3 weeks then started to climb back up.. that was it.
I started drinking my smoothies after that, then I found the Eat to Live book- I had it packed away.. I started reading and the way he writes it all made sense.
Of course.. then my neighbor just dropped off a bunch of food.. bless her heart. and not 30 minutes ago I was telling her how we were only eating veggies, fruit and beans with a bit of whole grains.. Now I have sugar to dump out, sugar cereal.. there were some things that could be used- like refried beans and the alfredo sauce- because Eimi was making pasta for the kids tonight (trying to use up the pantry items- but I can't eat it). Bless her heart.. at least she said that she would have plentiful veggies and fruit in a month or so from her garden and a friends garden who always plants more than she can use..Some people just don't understand what vegan means..

I so wish I could garden here. It would just cost too much for a house we are not staying in.. but I did see some half barrels on legs at the store yesterday that I would love to get and maybe plant some tomatoes at the very least. I love tomato sandwiches!

Thanks for the resources Debra! Right now I am back to being a carnivore. I do stretch our meat pretty far though- we don't eat steaks and when we have roast I eat more veggies than meat. When the summer garden starts producing I will probably be eating mostly produce again. I can't wait!

Alee, there are a couple of books that I want to get from Amazon- Vegan with a Vengeance and Veganomicon (sp) but they are the same author. both are supposed to have some great meat alternative recipes as well as other awesome recipes. http://myvegancookbook.com is another great site. I doesn't use any isolated soy protien in his recipes and keeps them low in fat too. I love his chili recipe. He posted a meatball recipe this week that looks good. He also has a cheese sauce recipe and grain/garden burger recipe that look good too!

There is a great book all about green smoothies.. called Green for Life.
Bananas for smoothies are best ripe. Even disgustingly ripe they are sweeter this way and make the smoothie creamier. All of my bananas this morning where not that ripe.. my smoothie was not that sweet. So I pulled some bananas from the freezer that were very ripe when we put them in..
We have been eating lots of beans: refried, hummus, whole bean, and chili.. Corn tortillas and pita bread has been our bread of choice- and much cheaper than whole wheat bread. I am drinking 6-7 qts a day! I am making my smoothies seperate than the rest of the families. Since I have over 100 lbs to lose I need to get more greens in and less beans.. So in my smoothies I put 1 cup of beans, 2-3 lbs of greens, lots of bananas, strawberries and mangos- enough to make the smoothie sweet. I drink on it all day.
I have hummus or chili for lunch and just smoothie for breakfast and dinner.

I make 4 gallons of green smoothies every morning. We drink half for breakfast and the other half for lunch or dinner. I put 8 cups of cooked pinto beans, 4 lbs of greens- half spinach and half romaine lettuce and then enough fruit to make it taste good.. today was 2 oranges, 1 cup of mango, 2 cups of mixed berries, 3 frozen bananas and a ton of fresh bananas!.. yum.. I drink 3-4 qts a day.

Greens are such an important missing link in alot of people's diets, especially children and I load my down with strawberries and my son LOVES them and he gets the benefits of greens.

I find when I do them, I have more energy, less tendency to snack, improved overall health.

Lol! We used to have 'green smoothies'. Made them with kale, bananas, and pineapple. Good way for my mother to sneak the veggies in for my sister and I. We were vegan for many years, and my mother still is. Some of the most flavor-full, delicious food I've ever had. I'm still vegetarian, but I have a thing for yogurt and cream-based products, so I find it hard to be completely vegan. My favorite cookbook, though, is all vegan. It's called Vegan Planet, can't recall the author right now, but it's a big thick book full of REAL GOOD recipes (not the stereotypical cardboard-flavored dishes full of strange ingredients) made with healthy ingredients. Might look into that. :)

Awesome, thanks for the info. I buy 'old' bananas by the bag full at a discount. Doesn't matter to me if there is a brown spot on the outside, they are still good on the inside. I just ordered this book yall are talking about. But since it won't be here for a few days, what are the benefits of a green smoothie?

For the green smoothies, I put in about 1 cup spinach, 1 ripe banana and then whatever other fruit you want- if you want to and you can do just the banana. I also add some agave nectar and a littl water to get in mixing. It does come out green, but the banana makes it smooth and cuts the "spinach" taste.

Get creative- if you google green smoothie, people use all kinds of greens from parsely, kale, lettuces, etc.

What exactly are yall putting in the green smoothies? I don't consider myself quite a vegan/vegetarian but I eat that way most of the time. We grow our own beef so sometimes I'll ahve some of that when the urge hits, which isn't very often. Great topic here.

I prefer tofu over meat alternatives anyway.. using mori nu tofu I make a great egg white sandwich- and you can't tell it isn't eggs.. I make a bq tofu that everyone loves.. using firm tofu that I freeze drain and slice- then put in the crock pot with bq sauce.. yum.. I have a sloppy lentil recipe that is good too.. but tofu isn't for everyday.. I try to do one special meal a week. I am fortunate the my boys will eat my refried beans! or even plain pinto beans..

Debra- Yes, the meat alternatives are very expensive. I don't eat a whole lot of meat and prefer to eat a lot of bean and fresh fruit and veggies as well. :D

Alee, we are pretty low in cash here too. I am buying just the basic necessities.. greens, bananas, other fruit for smoothies, beans, other veggies- like onions, garlic, potatoes, and corn tortillas.. this is it. Of course I am buying for 8. :-) I have been eating beans every night and green smoothies for breakfast and lunch.. I am down 10 lbs now! yay..
I feel better than I ever have.. when I went vegan the last time I ate a lot of vegan alternatives.. tofu daily, veggie meats and soy cheese. I didn't feel good that way. This diet is centered around raw fruits and veggies and the beans.. We will have tofu or veggie meat- but it will be once a week as a treat (I love bq tofu sandwiches!!)..I have gotta find that book.

Hi Debra!

Yes, I was trying to go vegan, but some changes in our cash flow means I need to eat what is in the house, which means dairy and meat. :( The book "Skinny Bleep" is about being vegan and it is great! I think you would really enjoy it! It sounds like you are on the right path!
