I love them but they are loaded with sodium.. and all the recipes I had found used steamed veggies I wanted to start out with raw.. So I did.. you can read the rest of the story on my blog

I love pickled veggies too. I do dilly beans (green beans) each year..they are my kid's favorites..and green tomato pickles are great. I like to do a mixed pickled veggies too sometimes. I think right now all I have left of my canning pickles from last year are one jar of dilly beans and a few jars of pickled pepper rings. I have never done JUST carrots..will have to do that. I love carrots! My sister in law has an uncle who did the most wonderful pickled okra....she has the recipe and I plan to do some as soon as I get enough of an okra crop. My okra usually produces just about enough for one pan of fried okra and that's it. I am trying more types this year and hopeing for a good little crop of it.
