Posted - Mar 11 2008 : 4:42:39 PM What reminds you of summer? I have had the winter blues but just made a bowl of cucumber salad and boy did that taste like summer to me! All I do is slice up cucumbers thin, add a little sugar, salt, and pepper and stir in some apple cider vinegar and water. Yummy and simple. I also add onions sometimes. -Elizabeth |

Posted - Mar 18 2008 : 6:16:37 PM I had frozen a whole big pile of sliced tomatoes last summer in a pie plate shape, so we had a tomato pie a couple of days ago (during the blizzard). It was runny and a bit messy, but SO DELICIOUS and definitely summery!
And Faith and Laura. . .we just moved to Ohio from the Plattsburgh area, and are going back to our favorite camping spot this summer, Rollins Pond (by Tupper Lake). The Adirondacks are my favorite!!! |

Posted - Mar 12 2008 : 10:06:21 PM I like to chop cucumber and fresh tomato together and toss with a little drizzle of italian dressing and let set for a minute or so for the flavors to blend..talk about a yummy summer time easy peasy refreshing dish..gotta love it! garden freshness ...mmmmwahh!

Posted - Mar 11 2008 : 4:50:37 PM I make a summer salad too- cucumbers, chick peas, mozarella cheese, olives,tomatoes, red onion, all cubed or cut up, add a nice oil, vinegar, oil, pepper, salt and some parsley!! YUMMY!!! I like to even add a nice salami when I have it. I serve it with just some nice crusty bread to soak up the juices and I never have to turn on the oven!!!
