I am waiting for the pressure to go down on my canner so I can take out the jars and go to bed....it is after 1am. Not that I am not up this late alot..but I am sleepy tonight!
I got 10 pints of chicken canned tonight...all white meat chunks in chicken broth...so handy to have on hand. I still have more chicken in the freezer to can up from my meat chickens..and still a few live chickens out there to do later on...they will be soup hens now for sure....way older than I would like. It is just too cold for me to "finish them off" so they are still eating and getting more and losing all money I would have saved on meat..haha. Oh well.
I plan to can up some bigger peices tomorrow...bigger hunks raw pack. These I did hot pack..roasted the chicken first and cut in chunks and filled jars before adding broth and sealing up. 90 minutes in the canner. I need to do more ground meat (beef and elk) to use in tacos and like that too. I am all out of it canned up..that is one of the handiest meats for me to have on hand. I cook it up first and add onions before canning..very easy on taco night!!

We are LOVING our canned chicken (first year for it!) and canned venison! it's so much easier to make up a dinner that I've not planned ahead enough for to thaw meat, etc for. The canned stuff is very tasty and so easy to use! We're loving it!! And canned chicken soup, too, with alphabet pastas.

Jenny, I have thought of canning meat and never have. I hope yours turned out well. It sure does make for quick meals! And I think most of us can use that once in a while. Okay for me it would be quite often! :)

You know, that's something I've not considered doing. I remember when I was a kid we canned beef once and I remember it was really good. Good for you getting that all set up to have on hand for easier cooking.

Aunt Jenny - congrats on your 8000 posts! I bet if you put them all together, they would make a book of great farmgirl knowledge and friendship.
