My Aunt gave me a cookbook of Rachel Ray's for Christmas (No Repeats, 365 days of dinner recipes) and I've looked at it off and on but never really found anything I wanted to make (I like her more for her love of Pit Bulls than cooking)...last night, I ended up making dinner based on what was in the house (chicken, potatoes, herbs and asparagus), and my GOODNESS it turned out nicely!

2 Chicken breasts, seasoned with s&p and fresh thyme, sauteed in olive oil; remove chicken, same pan: thin sliced small yukon gold potatoes, oil, 2 tbs unsalted butter and some more fresh thyme. Add thinly sliced onions, then 2 glugs of white wine, some dijon mustard, chicken stock and cook to form sauce; add asparagus and cook till tender, toss in some fresh parsley and put on the plates.

It was such a good meal, easy and fresh tasting, and it only took one pan! I didn't have a mess to clean up and it took all of 30 minutes. I think I'm going to look at this cookbook a little more!!!!

You should try the Pretzel~Crusted Chicken Breast with a Cheddar~mustard sauce, Day 267, page 235! It took longer than 30 minutes but my family went bonkers over it. We're having it this week.

Lisa, I'm glad you gave it a shot! Funny, I was even thinking about it (the meal) last night wondering if it was too soon to make it again :) I'm sure it turned out just fine without the wine...I'm usually having a glass while I'm cooking, so I just dump a bit in from the glass :)

We have to get together anyway, hockey or no! I'd love to man the kitchen with you!!! Everything is so ugly, here, too...it's pretty depressing, but it has to end soon :)

I kinda tried this last night but used a baked chicken & put some of the drippings in my pan, & didn't have wine(you know us beer drinkers), but is was still most yummy. Jim loves anything that has any sort of mustard in it so he was in heaven. We really need to have you guys up during hockey season. Jim gets all of the college channels & can watch a hockey game every night. It is just that it is so UGLY here right now, with mud everywhere. But we could cook & they could watch hockey.

I have Rachel's second book and found the recipes to be real duds. Perhaps her later books are better. I'll take a look next time I'm in the bookstore.

I love to watch her show in the winter when I'm a couch potato *U* Not so much when the weather warms and the animals need more attention. I cook some yummy stuff after watching those FOod Network shows...we get fat!

Oh yeah, I was just totally impressed, and now that I'm actually "looking" I see all kinds of things that I want to make. It's odd...I wonder what "food" mood I was in that I wasn't intrigued....you know how some things just don't sound good? That's how I felt when I first skimmed it....Now that I'm eating humble pie, I highly recommend it, Lea :)

EASY! 30 mins. max and SO good. Justin had a clean plate and that's rare. He does his best with veggies, but this, he ate.

Rachel is a genius in the kitchen, huh?
I also love Sue Gregg- I got a few coconuts today and came home and made two blender coconut pies...easy! It makes it's own crust. YOu don't even have to have flour (I grind mine) but put the whole grains right in the blender and mix it all up together. I used millet again...tasty!
