I need a creative way to use up some frozen blackberries. Anyone have some wonderful recipes they would share?

You can mix 'em in a fruit salad, add those tiny marshmallows, vanilla yogurt and a little coconut to make it interesting

You farm girls have given me some great ideas to create with the blackberries. I think I'm going to try the dessert pizza and the cheesecake. Jonni, I had completely forgotten about making a syrup to pour over ice cream. Good thing my little isn't reading this over my shoulder or she will be sending me off to the kitchen right now!

Thanks for the ideas! Keep'em coming!

It depends on how much you have, but I would use a cobbler or like someone else mentioned, the smoothie thing. You can also mix them with a liquor to make a syrup (heat them in a small pot on the stove) and put them over vanilla ice cream--YUM

Blackberry Dessert "Pizza"

I make this with leftover pizza dough on pizza nights at my house. Everyone ADORES it.

Some leftover pizza dough
Some Blackberries
Some Cream Cheese or Mascarpone Cheese
Some sugar

How's that for exact measurements? Spread the leftover pizza dough in the bottom of your trusty well-seasoned cast iron skillet, a little thicker than if you were making a pizza. Top with globs of cream cheese as small as you can get them, but don't obsess about getting it perfectly spread out. I use maybe 4 oz. Top with frozen blackberries, between 1/2 and 1 cup. Sprinkle sugar over. Use more sugar for very tart berries, less for very sweet ones (between 1 tablespoon and 1/4 cup). Bake in the same very hot oven you used for pizza (450-500) until filling is bubbly and crust is golden brown.

If you felt like it, you could make an entire recipe of pizza dough and turn out 4-6 of these tarts for a party.

I love making smoothies in the blender with blackberries, strawberries, and any other berries we might have around. Just add either milk or soy milk and blend until smooth!
