Does anyone have a recipe on how to pickle/preserve these?

I KNOW! We were roommates at the time. We called the "Ask a Nurse line at the hospital and ended up taking him to the emergency room because the more he tried to wash the oil off, the worse it got! Fortunately, it didn't scare him out of the kitchen for life.

I use pickling salt...I don't know if it would matter..may be cloudy otherwise.

Another quick question, should I use table salt or Pickling salt?

I learned the hard way by getting halfway done and then deciding that maybe I should wear gloves after all..too late..and the gloves made it worse by then of course...and my blistered hands burned for days !!! I did this probably 12 years ago..but havn't forgotten since. There are gloves in the dollar section of any grocery store now..a whole pack of them! Well worth it!!!

Hey Bridgette and Jenny,

The recipe looks great and YES wear gloves. My little brother failed to do this when he was canning his and well, uh >kicks dirt with toe<. He's a boy you see, and when he went to the little cowboys room, he, well, burned something.

Those oils stay on your skin a while. Be warned.

I use this recipe...with great results:
Pickled peppers: (I use pepperocini, banana, anaheim and like that the same way)
4 Qts long red, green or yellow peppers
1 1/2 cups salt
4 quarts plus 2 cups water
2 Tbsp prepared horseradish
2 garlic cloves
10 cups vinegar
1/4 cup honey
Cut two small slits in each pepper, or slice them into 1/4" rounds. You may want to wear gloves to prevent burning hands. (I learned this the hard way) Dissolve salt in the 4 qts. water. Pour over peppers and let stand 12 to 18 hours in a cool place (I use the fridge if it is a real hot day) Drain, rinse, and drain thoroughly. Pack peppers into jars leaving 1/4" headspace. Combine the 2 cups water with all remaining ingredients except honey, and simmer for 15 minutes, then add honey. Remove garlic.
Pour boiling hot pickling liquid over peppers, making sure that there is 1/4" headspace. process half-pints or pints for 10 minutes in boiling water bath.
