Posted - Jan 28 2008 : 4:48:38 PM Does anybody make bagels? How? Are they difficult? They seem to be kind of a "special treat" item when we buy them (not often), so I'm wondering about making them?? |

Posted - Jan 30 2008 : 07:08:18 AM I recommend the book "Jewish Cooking in America" by Joan Nathan. It's really interesting, so even if you decide that bagels are too much trouble, you've still got a great book to read. |

Posted - Jan 28 2008 : 11:15:10 PM I have made them a couple times..but not lately..they were good. I used the recipe in "The Wooden Spoon Bread Book"...my favorite bread book.

Posted - Jan 28 2008 : 7:46:04 PM The only tricky part about making bagels is that you have to boil them before you bake them. But homemade bagels ARE A DREAM TO EAT. I use the bagel recipe from Nigella Lawson's How to be a Domestic Goddess, which works out better than most of the recipes in that book do for me. But I suppose any stiff bread recipe would do. I make a BIG batch so that I have some to freeze.

Posted - Jan 28 2008 : 5:31:35 PM I use to make all my own bagels. Yum! Make your basic bread recipie, but make it a bit stiff. Let raise as usual and then pinch off as if for rolls. Shove your finger down in the middle of the roll and twirl it around on an oilded surface to shape. Let stand @20 minutes. Drop into 3 quarts boiling water that has had 1 TBL sugar disolved in it. Keep water boiling at all times. Cook 3-4 bagels at a time turning often for 5 minutes. Remove with a slotted spoon. Brush with a glaze of 1 egg yolk and 1 TBL water. Bake on a sprayed cookie sheet for 35-40 minutes at 400. Cool on rack...if they last long enough to bother!
