In my quest to learn, learn, learn new homemaking/homesteading skills I bought a mozzarella kit from cheesemaking.com and have done 2 batches already! It is so much fun! I'd like to venture into hard cheeses, too. But first I want to try cream cheese, yogurt, and sour cream. I need to order the cultures first. Anyone here make their own cheese?

Yes, I used to, years ago. We had a lovely Jersey cow, and every November she'd freshen and we'd have a surplus of milk. It worked out great because I was out of the garden by then, and could turn my attentions to butter and cheese. We also fattened a couple of pigs on the excess; milk fed pork is incredibly tender and delicious.

I don't miss making the mozzarella that much, but I do miss fresh cottage cheese. The stuff in the stores is gelatinous and inferior. I also miss the lovely fresh winter butter, with it's pale yellow color, and the home churned ice cream with berries from our patch!

Thanks for the heads up on Caprine. I am using cow's milk right now from the store, but I hope to have milk goats of my own in the future. I bookmarked the site. Thanks again!

Can you do that without animal rennets? What's in the cultures you order?

I have bought mine through Caprine supply (goat supply catalog..they have a website) I have been happy with the stuff I have bought from them. I bought a kit to do fresh goat cheese that came with molds, starter powders and rennet and cheesecloth, and then bought extra rennet and mozzarella culture stuff too.

Aunt Jenny, where do you buy your cheesemaking supplies? Is there a cheaper source than the one I found? I was able to make ricotta from the leftover whey, which just AMAZED me! I'm thinking of doing this recipe for dinner tomorrow night with the mozz and the ricotta, using the whey liquid left over as the liquid source in the pizza dough:

I have made ricotta and chevre..and cream cheese and yogurt...I havn't ventured beyond that yet..but want to do mozzarella..have the stuff to do it...just need to MAKE the time.
