I bought a small bit (about 1/2 lb.) of Amaranth grain (not flour) at the bulk food store last week and forgot to ask for the recipes.

I've searched the forums and have only found recipes using the flour.

Has anyone ever used this as a grain in recipes?

I'm going back to the store in a few days - but wanted to try it out today perhaps.

You can make a pilaf with amaranth grain, 3 cups of water to each cup of amaranth, put both water, amaranth and a pinch of salt in a pan, bring to a boil and then simmer for 20-25 minutes. You can add chicken seasoning for more flavor. We like to add SPIKE for more flavor. We sometimes add mixed veggies to it while its cooking or onions and garlic.

Thanks gals! Both recipes sound great. I may try the chicken one tonight. (Don't have any dates for the bread recipe).

I would love the nutritional info for the plain amaranth if you would.

Amaranth Date Nut Bread

1 cup chopped dates
1/2 cup amaranth
1 cup boiling water
2 eggs
1/2 cup honey
1/4 cup butter, melted
1 tsp vanilla extract
2 cups whole wheat flour
2 tsp baking powder
1 cup chopped pecans

Soak dates and amaranth in boiling water 15 minutes. Beat eggs well, add honey and butter, and beat again. Stir in all remaining ingredients, mixing well. Pour into an oiled loaf pan, and bake at 350 degrees for 1 hour and 15 minutes.

Do you want the nutrition info for plain amaranth, or were you more interested in the recipe nutrition info?

I think this recipe sounds good, plus it's easy, so I might have to try it. Chandra's recipe sounds awesome too!

Book says: Another way to take advantage of amaranth's natural stickiness is to use it as a poultry "dredge." The faint vegetable taste of amaranth is enhanced by the lemon-soy ginger sauce. Serve with a side dish of noodles in soy or sesame sauce.

Amaranth Chicken Oriental

1 C cooked whole amaranth, chilled
1.5 lbs. boneless chicken breasts, cut into bite-size pieces
Grated rind and juice of 1 lemon
2 Tbsp soy sauce
3 Tbsp vegetable oil
1 carrot, very thinly sliced
3 scallions, including green parts, thinly sliced
1 1-inch piece fresh gingerroot, peeled and grated or thinly sliced
1 clove garlic, minced

Preheat oven to 350*F

Put the amaranth on a plate and spread it out a bit. A few pieces at a time, press the chicken into the amaranth, then turn and press again so that all sides are coated. (To prevent the amaranth from sticking to your fingers, dip your hands into cold water.) Transfer the chicken to a plate covered with wax paper (put more paper between subsequent layers if necessary) and set aside.

Whisk together the lemon, soy sauce, and vegetable oil, blending thoroughly. Stir in the vegetables. Place in a flameproof baking dish and heat slowly over low heat. Add the chidken, turning gently to coat with sauce. Cover the pan and bake in preheated oven until the chicken is tender, 12 to 15 minutes. Makes 4 servings.

The Amaranth chicken Oriental sounds yummy! That recipe would be great. Also if it lists any nutritional value, that would be good too.

I'd also like to try the date nut bread.

I went back to the bulk store and the only recipe they had was for basic cooking.

Deb, I too recently bought some amaranth. Mine is in a package. I haven't decided what to do with it yet, but there is a basic recipe to cook the amaranth and also a recipe for amaranth date nut bread that sounds good. I'll post if you want either one of these.

She lists 3 recipes for Amaranth. I will list the 3 titles and if you're interested in any or all three, then I'll post them.

I've heard of Amaranth, but never used it. Your post also made me giggle, since there is a small town in Manitoba called "Amaranth". Good luck in your search for recipes!
