OH LORDY! LORDY! DIABETIC COMA! friend Sugarbucket made absolutely the most DEVINE 'carmel pie' .. and i was SHOCKED at how easy it is! she buys a couple cans of 'evaporated milk' .. .says the 'cheaper brands' actually come out better for her!!

THEN .. she puts them in a pot big enough to cover them with water .. and does a SOFT BOIL for two hours and twenty minutes (you can flip the cans half-way through ...

after the boiling time .. put them in the fridge overnight .. open 'em up the next monring .. pour it out into a pie shell! VOILA!

now how easy is that!! and i promise you it is sooooooooo very delicious!!! xoxo

Ok, I cut into it last night. It's extremely rich and sweet. If you make it, I would suggest you cut the pieces skinny like you would for cheesecake. A standard pie slice is just too much. I had another thought to maybe tone down the sweetness; maybe a layer of semisweet chocolate in it or drizzle it over each slice.

Well, I made it. We haven't cut into it yet but I took a lick from the can. Yummmm. However, I found that 2 cans wasn't really enough to fill a 9 inch pie. That's ok, I layered walnuts (pecans are too expensive) and I'll fill the rest up with whipped cream. I thought about making chocolate pudding to put on top but decided not to. I can hardly wait to have a piece.

Is that kinda like me telling my kids they can't cook from the other room? Though, I've walked off and ended up with overflowing pots or food burning a time or two myself. That's how most kitchen fires start I believe.
I started cooking when I was about 8, maybe 9 at most, after my parents divorced and mother had to work. She would leave me instructions (or tell me in the morning) what to do and dinner would be ready about the time she got home. That was in '54 or '55, long time ago.

well .. ronna chile' .. i've ROCKED that ROCKER more than once! and 'burnt cookies' are my specialty .. but .. i reeeeeeeely can cook if you lock me in the kitchen .. take the phone with you .. and don't let me have any books, magazines or needle and thread! xo

Frannie,
You've made known that cooking is not your best talent, so making a mistake like that is understandable. I've heard pros and cons on heating in the can, as it could explode, but it's been done this way for many years. Glad we caught it before anyone tried it and thought you were off your rocker :)

Oh how good this sounds. My step mother (she from Mexico) make caramel this way when I was young. Ohhhh it was good. Thanks for the memory.

friend kathy (sugarbucket) got a good giggle out of me telling ya'll to use 'evaporated' milk! yep .. she said two hours and twenty minutes (for 2 cans) ... she made some more .. and is going to put them into little 'pie tartlets' .. and top them with shaved chocolate. (i'm gonna make these (WITH SWEETENED CONDENSED MILK!!!) and add a pecan on top of each .. and mayhaps a dollop of 'whipped cream'. it does thicken .. maybe because she refrigerates it overnight. her husband, eddie said you can also just open the cans .. pour into a crockpot and cook for about 7 or 8 hours and get good caramel too!

oh .. kathy also says she 'pipes' the caramel into the tartlets with a 'baggie'. xo

So, Frannie, I use 2 cans sweetened condensed milk, boil them for 2:20 hours, refrigerate overnight, then pour into pie shells? Does it thicken enough that it doesn't just pour out into the empty space left by a served slice? I wonder if a topping of sliced apples and whipped cream might mellow out the sweetness?

are you sure it's not sweetened condensed milk, rather than evaporated? The Mexican people make leche dulce that way.
